Bryan's Spicy Red Lentil Soup Recipe
Ingredients
- 1 teaspoon olive oil
- 1 cups chopped red onion
- Salt and pepper to taste
- 1 (28 ounce) can diced tomatoes
- 2 cups dry red lentils
- 1 cups frozen chopped spinach
- 2 cups water
- 2 teaspoons dried basil
- 1 teaspoons ground cardamom
- 1 teaspoon ground cumin
- teaspoon ground cayenne pepper
- teaspoon curry powder
Directions
Step 1: Heat the olive oil in a large pot over medium heat.
Step 2: Add the chopped onion to the pot and cook, stirring frequently, until the onion becomes golden brown. Season with salt and pepper to taste.
Step 3: Stir in the diced tomatoes, dry red lentils, and frozen chopped spinach.
Step 4: Pour in the water and add the dried basil, ground cardamom, ground cumin, cayenne pepper, and curry powder. Mix everything together well.
Step 5: Bring the mixture to a boil, then reduce the heat to low and let it simmer for 25 minutes, stirring occasionally, until the lentils are tender and fully cooked.
Step 6: Once the soup is done, transfer it to a blender and pure it until smooth.
Step 7: Serve the soup hot, garnished as desired.
Tips
You can also use a handheld blender to pure the soup directly in the pot.
