  • If you don't like coconut, feel free to leave it out! The only essential ingredients are nut butter, oats, and a sweetener. The rest is up to you.

Store the granola bars in a shallow, airtight with parchment or wax paper between each layer to prevent sticking. Alternatively, individually wrap each bar in wax or parchment paper. They should last about a week.

Can You Freeze Granola Bars?

Yes, you can freeze homemade granola bars for up to two months. Arrange the bars in a single layer on a baking sheet, cover, and freeze for a few hours or overnight. Once frozen, transfer the bars to a zip-top freezer bag or another freezer-safe . To enjoy, thaw them at room temperature.

Ingredients

This recipe yields 8 servings.

  • Cooking spray
  • 2 cups rolled oats
  • cup shredded coconut
  • cup honey
  • 2 tablespoons creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt

Directions

  1. Preheat your oven to 325F (165C). Grease a 9-inch square baking dish.
  2. Spread oats and coconut evenly across a baking sheet. Toast in the preheated oven until browned, about 10 minutes. Once done, transfer to a large mixing bowl.
  3. In a saucepan over medium-low heat, mix together honey, peanut butter, vanilla extract, and salt. Stir until smooth.
  4. Pour the honey mixture over the toasted oats and coconut. Stir until everything is well-coated.
  5. Spread the mixture evenly into the prepared baking dish.
  6. Bake in the preheated oven for about 15 minutes for crunchy granola bars, or less if you prefer them chewy.
  7. Allow the bars to cool completely before cutting them into squares or rectangles.

To keep these bars soft, reduce baking time to about 8 to 10 min. 15 is too much. Remember if you are adding additional dry ingredients to substitute them for oats. There should be 2 cups dry ingredients total. If you add more dry(seeds, nuts, etc) you must also increase the wet (honey, pb).

As others have stated: This is a good basic recipe which can be made much better with a few changes. I used about 3/4 cup of honey and 3 tbsp peanut butter. I added a handful of coarsely chopped pecans which I put on the baking sheet with the oats & coconut, about 20 chocolate chips and 1/2 tsp cinnamon. I pressed half the oatmeal mix in the baking dish, sprinkled the choc chips and then pressed the remainder of the oatmeal mix on top. I baked them for TEN minutes as suggested, and that seemed to be perfect. I'm thinking those that ended up with granola might want to refrigerate the baked bars after they cool. Mine were crumbly, too, until I did this. After refrigeration, they were easy to cut into bars....no more crumbles. Also, pressing them into the baking dish might have helped. I love these and will def make them again!

I am a granola nut and have always wanted to make my own bars. I decided to make different two batches and add extra ingredients. One batch had everything listed, but I added some things I had on hand, i.e. crushed up pretzels, chopped walnuts that I put into a baggie and smashed a bit smaller, and mini semi-sweet chocolate chips. I later realized that I should have increased the honey mixture since I increased the dry ingredients. The bars did not stick together. This batch was really good though...except I won't put the coconut in the oven with the oats @ the beginning. It didn't taste very good later. The other batch had all ingredients except peanut butter, and I added chopped up Brazil nuts, raisins, and some orange zest to the honey mixture. Since I'd already precooked the oats and coconut for both batches, I had the same problem again with this batch. Other than that, these bars were amazing! I would have given five stars if the recipe hadn't told me to brown the coconut. The brown pieces gave the bars a strange taste in certain areas...and I'm a coconut fanatic! This recipe is super easy and a perfect base for adding more ingredients and truly making your own creation from it. Thanks!

Omg, so good. I subbed in half a cup of slivered almonds using 1.5 c of oats and the half c of coconut. Total dry ingredients of 2.5 c. Cooked in my toaster oven for 10 minutes and cooled before cutting. Perfect. Now I just have to avoid eating them all tonight!

I was low on granola bars and too lazy to go to the store, so I searched and found this recipe. I have made it twice in the last week, and it came out great both times. The first time, I had no honey, so I used molasses, which was a strong flavor, but tasty. The second time, I used honey, 1T. creamy PB and 1T. chunky PB, and we liked them even better for the little added crunch of the nuts. My hubs prefers his granola bars crunchy, so I pressed them very well, then baked each batch for 15-16 minutes. I STRONGLY SUGGEST if you bake them to be crunchy, you cut these bars fresh out of the oven. They will be sticky, and I had to kind of press the bars back down along either side of the cut lines before leaving them to cool, but after cooling, they kind of just snapped apart in the pan, but THEY STAYED INTACT IN THEIR BAR SHAPE. I cannot imagine how one could cut them into nice bar shapes if one waited for them to cool completely into crunchy bars, but after cutting while warm, it was easy. As an added bonus, i just added any of the little bits that fell off into our cereal container, so there was no waste. Love this recipe, and the hubs was impressed at how "professional" they looked. I was impressed that now I can make granola bars that are preservative-free. Thanks for sharing.

I added cinnamon, raw pumpkin seeds and substituted sunflower seed butter, I cooked it for 15 minutes. Next time 10 minutes and will make certain oats, coconut and seeds are completely mixed in with honey and seed butter For the most my bars fell apart but that was on me. Still made Delicious granola in yogurt. If adding additional dry ingredients then i recommend adding more seed butter.

I made two batches of this at once. In one, I added half a cup of sweetened dried cranberries. In the other, I left out the coconut and added half a cup of semi-sweet chocolate chips, as well as about a quarter cup of almond meal and a quarter cup of ground flax seed. (Unfortunately, most of the chocolate chips melted when I poured in the hot ingredients, though the results were still tasty. Maybe next time I'll try freezing them first and see if that helps.) I left the salt out of both kinds and didn't miss it. I also used only about half the honey (on the advice of another reviewer) and made up the difference with more peanut butter, since I don't like my snacks too sweet. Both batches turned out delicious! I would definitely recommend taking them out of the oven a few minutes earlier than the recipe calls for and slicing them right away before they harden. I'll enjoy experimenting with other flavors and add-ins when I make these again.

I loved this recipie! I added dried cranberries and chocolate chips and left out the coconut. next time I will mix everything and let it cool before I add the chocolate chips, the warm oat meal melted them and coated everything in chocolate.

When fully baked these bars are almost identical to a KIND bar. So, I microwaved mine for 25 seconds to soften a little, a personal preference. I would recommend cutting them straight out of the oven before cooling. I cut mine after cooling and they were crumbly in spots. Also, I found the honey a bit overpowering, so I may try maple syrup instead. Definitely an adaptable recipe in which I can see adding nuts, dried fruit, and/or substituting other nut butters for the peanut butter.

I upped the peanut butter to 1/2 cup, added 1 C puffed rice cereal and 1 cup chocolate chips. I followed the advice of others and baked for only 10 minutes. They turned out great!

I made this and it was awesome!! It is a great “base” recipe. I did leave out the coconut , used maple syrup instead of honey. Added slivered almonds, raisins and cinnamon.

Great recipe with simple healthy ingredients. Added walnuts & craisins & a batch with dark chocolate chips. Worked well pressed into muffin pan, easier removal & stays together, especially for crunchier texture

Easy and Fun to make. I like adding other other ingredients like raisins and walnuts. It is fun being able to add whatever I want to the granola bars. I accidently overcooked my first batch but it was still delicious.
