Caesar Potato Salad Recipe
This delicious recipe combines crispy bacon, tender baby potatoes, and creamy Caesar dressing. Perfect as a warm side dish or a comforting snack.
Ingredients
- 8 slices bacon
- 24 baby red potatoes
- 2 tablespoons olive oil (or as needed)
- Cracked black pepper, to taste
- cup Caesar salad dressing
- 4 green onions, diced
Directions
Step 1: Preheat the oven to 400F (200C).
Step 2: In a large skillet, cook the bacon over medium-high heat, turning occasionally, until it becomes evenly browned and crispy, about 10 minutes. Once cooked, transfer the bacon to paper towels to drain and crumble it into small pieces.
Step 3: Meanwhile, place the baby potatoes in a large pot and cover them with salted water. Bring the water to a boil, then reduce the heat to medium-low and simmer until the potatoes are slightly tender, about 8 minutes. Drain the potatoes and transfer them to a baking dish.
Step 4: Drizzle olive oil over the potatoes and season with freshly cracked black pepper. Place the potatoes in the preheated oven and bake until they are fully tender, approximately 10 minutes.
Step 5: In a large bowl, combine the roasted potatoes, crumbled bacon, Caesar salad dressing, and diced green onions. Toss everything together until well mixed.
