Asian Chicken and Corn Soup Recipe

Ingredients
- 1 tablespoon vegetable oil
- 10 button mushrooms, sliced thin
- 10 small oyster mushrooms, sliced thin
- 1 (3 ounce) package enoki mushrooms, roots removed
- cup chopped onion
- cup chopped celery
- cup chopped green bell pepper
- cup chopped carrot
- 3 cloves garlic, smashed
- Salt and pepper to taste
- 2 (14.5 ounce) cans chicken broth
- 1 (15 ounce) can cream-style corn
- 1 (5 ounce) can chunk white chicken (such as Swanson), drained
- 1 tablespoon rice wine vinegar
- 2 teaspoons Chinese five-spice powder
- 1 tablespoon cornstarch
- cup cold milk
- 15 leaves fresh Thai basil, chopped
Directions
- Heat the vegetable oil in a large pot over medium-high heat.
- Add the button mushrooms, oyster mushrooms, and enoki mushrooms to the pot. Cook and stir until lightly browned, about 5 minutes.
- Stir in the chopped onion, celery, green bell pepper, carrot, and smashed garlic. Season with salt and pepper to taste. Cook and stir for another 3 to 4 minutes.
- Pour in the chicken broth, cream-style corn, and add the chicken. Stir in the rice wine vinegar and Chinese five-spice powder. Bring the mixture to a boil.
- Once boiling, cover the pot and reduce the heat to medium-low. Let it simmer for about 20 minutes, stirring occasionally.
- In a small bowl, mix the cornstarch with cold milk until smooth. Gradually stir this mixture into the soup. Continue stirring until the soup has thickened, about 3-5 minutes.
- Remove the pot from the heat. Ladle the soup into bowls and garnish each serving with fresh chopped Thai basil.
Cook's Notes
For an extra crunch, you can sprinkle a handful of fresh bean sprouts on top of each bowl just before serving. This will add a delightful texture without the need for croutons!
