Cauliflower Salad Recipe
This creamy cauliflower salad is a perfect side dish for any occasion. With tender cauliflower, hard-boiled eggs, peas, pickles, and a hint of crispy bacon, its a dish thats both refreshing and flavorful. Serve it chilled for the best taste!
Ingredients
- 1 head cauliflower, trimmed and cut into bite-size florets
- cup mayonnaise
- 1 tablespoon mustard
- 1 teaspoon salt
- Ground black pepper to taste
- 3 hard-boiled eggs, chopped
- 1 onion, chopped
- cup frozen green peas, thawed
- cup dill pickles, chopped
- 3 slices crisply cooked bacon, crumbled (Optional)
Directions
- Step 1: Place the cauliflower in a large saucepan and cover with water. Bring to a boil and cook until the cauliflower is just fork-tender, about 10 minutes. Drain and let it cool slightly.
- Step 2: In a large bowl, whisk together the mayonnaise, mustard, salt, and black pepper.
- Step 3: Add the cooked cauliflower, chopped eggs, chopped onion, peas, dill pickles, and crumbled bacon (if using) to the dressing. Stir gently to coat everything well.
- Step 4: Cover the salad and refrigerate for at least 2 hours, but up to 24 hours. The longer it chills, the better the flavors meld together.

I omitted the peas, dill pickles, and bacon from the recipe and instead added 2 cooked cubed potatoes and 1 cup of diced celery, using only 2 eggs. I steamed the peeled, diced potatoes for 5 minutes, then added the cauliflower and steamed for an additional 5-6 minutes. After putting the salad together, it turned out fantastic!

Great mix of ingredients! I would never have thought to combine them myself. Instead of cooked cauliflower, I used it raw and the result was delicious! I made a few additions: 1 tsp. of dill, a sprinkle of hot sauce, and some small cubes of pepper jack cheese. I swapped peas for diced celery since that's what I had on hand, and I skipped the bacon. The dish turned out with a nice, crispy texture, and I didn't have to wait for it to cool.

I have made two smaller batches within a span of about ten days. I did not cook the cauliflower either time; I simply broke it into bite-sized pieces. The amount of dressing can be halved, as it stores and travels well and develops more flavor overnight.

This salad is fantastic! I decided to enhance it by including an additional egg, finely diced celery, celery salt, and shredded sharp cheddar cheese. I also used dill pickle relish instead of chopped dill pickles. My husband absolutely adored it!

I intend to sprinkle capers on top before serving. Next time, I might experiment with substituting Greek yogurt and lemon to make the mayo lighter, as I do with my other salads.
