Okay - I made this using brand Ken’s Honey Mustard, which is more like a dressing than a mustard. I think a straight up honey mustard would be slightly different result but!! I loved this! I did add 1/4c minced celery and tsp minced dried onion. I let this sit for a couple hours before serving. When I did, it was a bit runnier than I was expecting so added two more chopped, hard boiled eggs. I thought this was a fantastic twist and will make again - both using the honey mustard dressing and, trying with a true honey mustard. Served on an open faced bagel for lunch. If I had lettuce, would have added that too. Overall; great, easy and delicious! What more can you ask for?? Thanks Pat!!

I don't eat egg salad often, but after trying this recipe, I realized I prefer a yellow mustard egg salad over this honey mustard version. I just wasn't a fan of the sweet taste. If I were to make it again, however, I would add the optional pickle relish suggested to add more flavor.
