Ingredients

- 1 butternut squash, peeled, seeded, and cut into cubes (about 4 cups)
- 1 onion, cut into 8 wedges
- 2 cloves garlic, peeled
- 2 tablespoons olive oil
- 4 cups chicken or vegetable broth
- 2 tablespoons harissa paste
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1 1/2 tablespoons brown sugar
- 2/3 cup heavy cream, or as needed
- Salt and freshly ground black pepper to taste
Directions
- Preheat your oven to 400F (200C) and line a baking sheet with parchment paper.
- In a large bowl, toss the cubed butternut squash, onion wedges, and whole garlic cloves with olive oil until evenly coated. Spread them on the prepared baking sheet in a single layer.
- Roast the vegetables for 25 to 30 minutes, or until tender and lightly caramelized, stirring halfway through for even browning.
- Carefully transfer the roasted vegetables to a blender. If the vegetables are hot, fill the blender no more than halfway and hold the lid down with a potholder. You may need to blend in batches.
- Add the broth, harissa paste, cumin, smoked paprika, and brown sugar. Blend until the mixture is silky smooth.
- Pour the blended soup into a stockpot. Bring to a gentle boil, then reduce the heat and simmer for 10 minutes to allow the flavors to meld.
- Stir in the heavy cream and season with salt and freshly ground black pepper to taste.
- Ladle the soup into bowls and optionally swirl in a little extra cream before serving.

This butternut squash soup was truly outstanding. I prepared it for a "best soup" fundraiser at work and received numerous compliments. Although it didn't win, the people who voted for it believed I was unfairly treated. Surprisingly, some of them admitted that they don't even like butternut squash! I made a few slight modifications based on the kitchen tools and time constraints I had. Instead of blending it immediately after roasting, I refrigerated the ingredients overnight and then added them to the broth in the morning, along with Harissa paste, cumin, smoked paprika, brown sugar, and more. I let it simmer for an additional 35 minutes to ensure the squash was extremely tender for blending, which really helped enhance the flavors. After pureeing, I transferred the soup to a crockpot on low heat and stirred in some heavy cream. I wanted to drizzle a bit more on top for presentation, but since it was a fundraiser, I refrained from doing so. Despite not winning, this soup remains a personal favorite. I was delighted with how it turned out and would definitely make it again. Although I forgot to take a photo, the memory of its delicious taste will stay with me. Special thanks to France C!
