Creamy Chicken Marsala Recipe

Ingredients

  • 3 tablespoons olive oil
  • Salt and ground black pepper, to taste
  • 2 skinless, boneless chicken breasts, cut into cubes
  • 1 onion, diced
  • 1 cup sliced cremini mushrooms
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup Marsala wine

Directions

  1. Heat the olive oil in a skillet over medium-high heat.
  2. Season the chicken cubes with salt and pepper, then add them to the hot oil. Cook until browned, about 3 to 5 minutes.
  3. Add the diced onion and sliced mushrooms to the skillet, and continue cooking for another 5 to 7 minutes, or until the onion becomes translucent.
  4. Pour the condensed cream of mushroom soup and Marsala wine over the chicken mixture. Stir everything together and cook until the soup is heated through and the chicken is no longer pink in the center, about 3 to 5 minutes.
  5. Ensure the chicken is fully cooked by checking that the internal temperature reaches at least 165F (74C) using an instant-read thermometer.

Excellent recipe with a twist! I opted for using chicken thighs with the skin on, pan-fried them before removing the skin. After draining the fat, I added 2 tablespoons of butter and sautéed onions and fresh mushrooms. Then, I mixed in soup, wine, and 1 cup of chicken broth before returning the chicken to the pan to simmer for 45 minutes. The result was perfect!

I followed the recipe exactly as written at first. However, I found that there was an excessive amount of Marsala and the chicken turned out quite bland.
