Creamy Pesto Penne with Sausage Recipe

- 1 (16 ounce) package penne pasta
- pound ground sausage
- 1 (1.2 ounce) package creamy pesto sauce mix (such as Knorr)
- 1 cup milk
- cup olive oil
Directions
Step 1: Bring a large pot of lightly salted water to a boil. Add the penne pasta and cook at a boil, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain the pasta and transfer it to a bowl.
Step 2: In a large skillet, heat over medium-high heat. Add the ground sausage and cook, stirring occasionally, until browned and crumbly, about 5 to 7 minutes. Once cooked, add the sausage to the pasta.
Step 3: In a small saucepan, whisk together the pesto sauce mix, milk, and olive oil. Bring the mixture to a boil while stirring constantly. Reduce the heat to low and simmer until thickened, about 3 minutes.
Step 4: Pour the pesto sauce over the pasta and sausage mixture. Toss to coat evenly and serve hot.

Don't fret if you're unfamiliar with the pesto packet; I simply used my own homemade pesto with a reduced amount of olive oil. Additionally, since the packet suggested a creamy texture, I substituted light cream for milk. These small modifications proved to be a success. Great packet mix, but using jarred or homemade pesto would elevate the flavors even more. I suggest adding more sausage and opting for spicy Italian sausage for an extra kick.
