Ingredients

  • 1 pound ground round (85/15)
  • 1 cup finely chopped yellow onion
  • 2 teaspoons minced garlic
  • 1/4 cup beef broth
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon light brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon kosher salt
  • 1 teaspoon soy sauce
  • 1 teaspoon yellow mustard
  • 1/4 teaspoon black pepper
  • 1 (11.25 ounce) box frozen Texas Toast garlic bread (8 slices)
  • 8 ounces pre-shredded (farmstyle) triple Cheddar blend (such as Tillamook)
  • Bread and butter pickle chips, for serving

Directions

Step 1: Gather all ingredients. Preheat oven to 425F (220C).

Step 2: Heat a large skillet over medium-high heat. Add ground beef and chopped onion. Cook, stirring often to crumble the beef, until the meat is browned and no longer pink, and the onion is softened, about 8 minutes.

Step 3: Add minced garlic to the skillet and cook, stirring constantly, until fragrant, about 1 minute.

Step 4: While the meat cooks, whisk together beef broth, apple cider vinegar, brown sugar, Worcestershire sauce, salt, soy sauce, yellow mustard, and black pepper in a small bowl. Stir this broth mixture into the skillet with the meat.

Step 5: Cook the meat mixture, stirring often, until the sauce has reduced slightly, about 2 minutes. Remove the skillet from heat.

Step 6: Arrange the Texas Toast slices in an even layer on a large, rimmed baking sheet. Bake in the preheated oven until the bottoms are crisp and lightly browned, but the centers remain soft, about 8-9 minutes.

Step 7: Use the back of a large spoon to press into the center of each toast, creating a well with a 1/4-inch border around the edges. Spoon about 1/4 cup of the beef mixture into each well.

Step 8: Sprinkle each toast with about 1/4 cup of shredded Cheddar cheese.

Step 9: Return the baking sheet to the oven and bake until the cheese is melted and the toasts are crispy, about 5 minutes.

Step 10: Serve immediately with bread and butter pickle chips.

Texas Toast “Maid Rites” Recipe

The Story Behind Texas Toast Maid Rites

The Maid Rite sandwich has deep roots in the American Midwest, particularly in Iowa, where it was first popularized in the 1920s. Originally served as a loose meat sandwich on a soft bun, it became a staple of casual dining, celebrated for its simplicity and savory flavor. The combination of seasoned ground beef with minimal toppings made it accessible, affordable, and beloved by generations. Over time, creative variations emerged, one of the most delicious being the Texas Toast Maid Rites, which elevates the classic with a rich, buttery slice of garlicky Texas Toast, adding texture and indulgence to a familiar comfort food.

Regional Variations and Characteristics

While the traditional Maid Rite is most closely associated with the Midwest, the Texas Toast version reflects a Southern influence. Texas Toast is thicker and more buttery than regular sandwich bread, often with garlic or cheese incorporated. This adaptation highlights regional culinary differences: Midwestern sandwiches focus on loose meat simplicity, while Southern-style preparations tend to emphasize bold flavors, rich textures, and heartier portions. In some regions, toppings like pickled jalapeos, mustard, or specialty cheeses are added to reflect local tastes.

How It Differs from Similar Dishes

At first glance, Texas Toast Maid Rites may resemble a Sloppy Joe or a traditional cheeseburger, but there are key distinctions. Unlike Sloppy Joes, the meat is seasoned with a unique blend of Worcestershire, mustard, and brown sugar without the thick tomato sauce, resulting in a tangy, slightly sweet, and loose texture. Compared to a burger, the ground beef is crumbled and cooked with onions and garlic, served open-faced rather than in a bun, and topped with melting cheese that binds the savory filling to the toasted bread. This subtle balance of flavors and textures gives it a unique identity among American sandwiches.

Typical Serving Occasions

Texas Toast Maid Rites are commonly served in casual settings, from home dinners to diner-style restaurants. They are ideal for weeknight meals due to their quick preparation and high satisfaction factor. Often paired with bread-and-butter pickles or a side of fries, these sandwiches are also popular at family gatherings, potlucks, and small-town festivals. Their hearty nature and approachable ingredients make them a favorite for both children and adults seeking nostalgic comfort food.

Pretty good! And pretty easy. I’m from the Midwest and have never had a Maid Rite sandwich but was familiar with their loose meat offerings. I used Pepperidge Farm 5 cheese bread. Wish I had bread and butter pickles but served with regular hamburger dill. Overall, fun and tasty dinner and I would make again - especially on nights when I am trying to stretch what I have before the next grocery run. Thanks Julia for sharing this.

Slightly tangy, slightly sweet, slightly salty, without tomato. I cut this in half to make only two servings. I used dried minced onion, powdered garlic, and hamburger buns instead of garlic toast. I didn't bother to butter and garlic the buns but since there was garlic in the beef, I wasn't missing any flavor. All the garlic toast would add to this is calories and fats perhaps making it richer. The bread and butter pickles were a perfect match to this beef. I didn't cut them up or put them on top. I left them in a bowl on the side so they could still be eaten with the sandwich. This was a fast easy dinner to put together. The cheddar melted but really didn't hold anything together, so next time I'd use a creamier meltier cheese like American or Velveeta to add some moisture and act as a "glue" to hold it together better. My husband commented on how much he liked this. I will definitely fix this Texas Maid Rite again. Thanks for the recipe! I wish now that I'd left it as is and then I'd have leftovers for tomorrow. 2/17/24: I made this again and used both the Texas toast garlic bread and some English muffins that I buttered and sprinkled garlic powder on. Both were good and they didn't taste any different than using the burger buns with no garlic and butter. This is just a great little recipe and I'm going to make it again and again. The Texas toast version is less messy as you can make that little depression in the center, but that's the only bonus to using that as a base. Use what you have, it'll be fine.

Based on reviews, we added a TBL of Molasses and another TSP of Worchester. Topped the meat with pickled jalapenos then cheese before going under the broiler. TBH - think I'd just stick with Sloppy Joe sauce instead of concocting the make believe Sloppy Joe sauce. It'd save time and effort. I'd also add a little cayenne to perk it up.

We are from the south. We like a lot of spice. I think I will add a little more spice and double the amount of mustard and brown sugar. I may add a little ketchup or bbq sauce to it. I think pepper jack cheese may be good as well. Pickles definitely make it. Very filling.

Not as good as my sloppy Joe's. I expected a richer taste. Good but not great.
