Air Fryer Pesto Chicken Quinoa Bowl Recipe

- 2 teaspoons prepared pesto
- 1/4 teaspoon garlic powder
- 1 pound skinless, boneless chicken breasts, cut into 1-inch pieces
- 2 teaspoons olive oil
- 1/8 teaspoon crushed red pepper flakes
- 1/8 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1 zucchini, cut into spears
- Nonstick cooking spray
- 2 cups cooked quinoa (see Note)
- 10 basil leaves, chopped
- 1 cup grape tomatoes, chopped
- 1/4 cup crumbled feta cheese
Directions
Step 1: In a small bowl, mix together the pesto and garlic powder until well combined.
Step 2: Add the chicken pieces to the pesto mixture, stirring to coat evenly.
Step 3: In another bowl, combine olive oil, crushed red pepper flakes, salt, and freshly ground black pepper. Add the zucchini spears to the bowl and toss until they are well coated.
Step 4: Preheat your air fryer to 400F (200C) and lightly spray the basket with nonstick cooking spray.
Step 5: Place the seasoned chicken on one side of the air fryer basket and the zucchini on the other side.
Step 6: Air fry for about 10 minutes, or until the chicken reaches an internal temperature of 165F (74C) when checked with an instant-read thermometer.
Step 7: While the chicken and zucchini are cooking, prepare the quinoa by mixing it with the chopped basil leaves in a separate bowl.
Step 8: Once the cooking is done, divide the quinoa mixture between two bowls. Top each with 1/2 cup of chopped tomatoes, half of the cooked chicken, and half of the zucchini spears.
Step 9: Sprinkle each bowl with crumbled feta cheese and serve immediately.
Note
To prepare approximately 2 cups of cooked quinoa, rinse 3/4 cup quinoa under cold running water in a fine mesh sieve. In a saucepan, bring 1 1/2 cups of water to a boil, then add the quinoa. Reduce heat to medium-low, cover, and simmer for 15 to 20 minutes until tender.
