Smoky Irish Wolfhound Recipe

Grilled Grapefruit Whiskey Cocktail

This refreshing cocktail blends the smoky flavor of grilled grapefruit with the warmth of Irish whiskey, perfect for any occasion.

Ingredients

  • 1 ruby red grapefruit
  • teaspoon smoked salt (or to taste)
  • 4 pieces crystallized ginger, divided
  • Ice cubes, as needed
  • 3 fluid ounces Irish whiskey
  • 2 cups crushed ice, as needed
  • 2 ounces ginger beer (such as Fever Tree)

Directions

  1. Preheat your outdoor grill to high heat.
  2. Cut the grapefruit in half crosswise, then slice one of the halves into a -inch thick slice.
  3. Sprinkle both sides of the grapefruit slice with smoked salt.
  4. Place the grapefruit halves, cut-side down, along with the grapefruit slice, on the hot grill. Grill for 2 to 3 minutes until the fruit is slightly charred and grill marks appear. Flip the slice halfway through.
  5. Remove the grapefruit from the grill and let it cool.
  6. Squeeze the juice from both grapefruit halves and set the juice aside.
  7. Cut the grilled grapefruit slice into 6 wedges.
  8. In a cocktail shaker, add 2 slices of crystallized ginger and 4 wedges of the grilled grapefruit.
  9. Use a muddler to gently crush the ginger and grapefruit to release their flavors.
  10. Fill the shaker with ice cubes, 3 fluid ounces of grapefruit juice, and Irish whiskey. Cover the shaker and shake for 15 to 20 seconds until well chilled.
  11. Fill two rocks glasses with crushed ice and divide the cocktail mixture between the glasses.
  12. Top each glass with 1 fluid ounce of ginger beer.
  13. Garnish each drink with the remaining grapefruit wedges and crystallized ginger.

Cook's Note

If you prefer, you can use smoky ginger ale, like Fever Tree, instead of ginger beer for an extra smoky flavor.
