Four-Cheese Truffled Macaroni and Cheese Recipe

Ingredients:
- 1 (16 ounce) package cavatappi (corkscrew macaroni)
- 6 tablespoons butter
- cup all-purpose flour
- 5 cups milk, divided
- 2 cups shredded smoked Gouda cheese
- 2 cups shredded sharp Cheddar cheese
- 1 cups shredded Swiss cheese
- 1 cups grated Parmesan cheese, divided
- cup dry bread crumbs
- 1 tablespoon truffle oil
Directions:
- Preheat the oven to 350F (175C). Grease a 9x13-inch baking dish.
- Bring a large pot of lightly salted water to a boil. Cook the cavatappi in the boiling water, stirring occasionally, until tender but still firm to the bite, about 8 minutes. Drain the pasta.
- While the pasta is cooking, melt butter in a large pot over medium-low heat. Whisk in the flour until the mixture forms a thick, paste-like consistency, about 30 seconds.
- Slowly whisk in 2 cups of milk until the mixture is smooth. Stir in the remaining milk, increase the heat to medium-high, and cook, whisking constantly, until the sauce thickens and starts to boil, about 5 to 10 minutes.
- Add the Gouda, Cheddar, Swiss, and 1 cup of Parmesan cheese to the sauce. Stir until the cheeses melt and the sauce becomes smooth.
- Fold the cooked cavatappi into the cheese sauce, ensuring the pasta is well coated.
- Transfer the mixture into the prepared baking dish.
- In a small bowl, stir together the remaining cup of Parmesan cheese and the bread crumbs. Sprinkle this mixture evenly over the cavatappi and cheese mixture.
- Drizzle the truffle oil over the top of the casserole.
- Bake in the preheated oven for about 30 minutes, or until the sauce is bubbling and the topping is golden brown.
- Let the dish cool for 10 minutes before serving.
