Creamy Asparagus Pasta Recipe
This fresh and creamy asparagus linguine makes for a perfect meal, combining the crispness of asparagus with the richness of a light cream sauce. It's easy to prepare and perfect for a weeknight dinner.
Ingredients
- 1 pound fresh asparagus, trimmed and cut into 2-inch pieces
- 2 tablespoons butter
- 1 clove garlic, minced
- 1 pint light cream
- 1 pound linguine pasta
- 1 lemon, juiced
Directions
Step 1: Bring a medium pot of water to a boil. Add the asparagus and cook for 3 to 4 minutes, or until it turns bright green and is slightly crisp. Drain the asparagus and set aside.
Step 2: In a large saucepan, melt butter over medium heat. Add the asparagus and garlic, sauting for 3 to 4 minutes, allowing the flavors to meld.
Step 3: Stir in the light cream and bring the mixture to a simmer. Let it cook for 10 minutes, stirring occasionally, to thicken and combine the flavors.
Step 4: Meanwhile, bring a large pot of water to a boil. Add the linguine pasta and cook for 8 to 10 minutes, or until tender yet firm to the bite. Drain the pasta and transfer it to a serving dish.
Step 5: Stir the lemon juice into the asparagus and cream mixture. Pour this over the hot linguine pasta, tossing gently to coat. Serve immediately and enjoy!
