Potato and Sausage Soup Recipe
Ingredients
- 1 pound bulk mild Italian sausage
- 1 pound kielbasa smoked sausage, cut lengthwise and sliced into 1/2-inch pieces
- 4 cups diced potatoes (or more to taste)
- 4 cups water
- 2 cups chicken broth
- 1 cup heavy whipping cream
- 1 stalk celery, diced (or more to taste)
- 2 cubes chicken bouillon
- 1 tablespoon minced garlic
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1/3 teaspoon crushed red pepper (or more to taste)
Directions
- Heat a large pot over medium-high heat. Add the Italian and kielbasa sausages to the pot and cook, stirring occasionally, until browned, about 5 to 7 minutes. Drain off excess grease.
- Next, add the diced potatoes, water, chicken broth, heavy cream, diced celery, chicken bouillon cubes, minced garlic, salt, black pepper, garlic powder, and crushed red pepper into the pot. Stir well to combine.
- Reduce the heat to low and let the soup simmer for about 1 hour 30 minutes, or until the potatoes are tender and the flavors have melded together. Stir occasionally to prevent sticking.
Recipe Tips
- If you prefer a spicier soup, consider using spicy Italian sausage, adding extra crushed red pepper, or incorporating some onions.
- For a twist, try swapping out the celery with a bit of kale.
- Despite the chicken broth, this combination of flavors works surprisingly well and creates a rich, hearty soup.
- You can adjust the cooking time based on how tender you want your potatoes. For thicker soup, chop some potatoes into smaller pieces to help thicken the broth.

Lori, this is great!! Per some recommends; substituted hot Jimmy Deans vs mild Italian, added onions (when browning the pork sausage) and added more garlic and red pepper flakes. While not called for - also added some sliced carrots. I could see kale as a great addition (see cook notes). Overall, super happy with the result and would make again! Thank you!

I made this nearly as written. The only thing I did different was omit the salt because I felt it had enough with the bouillon and chicken broth and it did. The only thing my family thought could make this soup better was if it was thicker/creamier. Other than that they all enjoyed it.

This is a keeper! It is both tasty and well suited to modification. This recipe is the most requested in my household. I would advise that you keep the potato chunks small so that they cook through.

We loved it . I only added 1 pound of spicy Italian sausage. I felt that was enough. Will surely make it again. GB from Florida

Had to improvise with what I had on hand. Did not have bulk Italians sausage so made home made Italian sausage mix and combined with One pound hamburger. Used 4 cups chicken stock and only 2 cups water. Used 1 1/2 cups heavy cream Added 1/3 of an onion, chopped. Topped bowls with Gruyere cheese . Served with garlic bread on the side. Yummy.

Confusing. Photo shows carrots but none listed in recipe. I am experienced cook so know to add extras but a newbie cook would find it a bit confusing to see carrots not listed as ingredient.
