Instant Pot® Zuppa Toscana Recipe

Original recipe (1X) yields 6 servings
Ingredients:
- 1 tablespoon olive oil
- 1 pound bulk Italian sausage
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- teaspoon salt
- teaspoon ground black pepper
- teaspoon red pepper flakes
- 4 medium potatoes, cubed
- 4 cups chicken broth
- 4 cups chopped kale
- 1 cup half-and-half
Directions:
- Turn on your multi-functional pressure cooker (such as Instant Pot) and select the "Saute" function.
- Heat the olive oil in the cooker. Add the Italian sausage and cook, breaking it apart, until it is no longer pink, about 3 minutes.
- Stir in the chopped onion and minced garlic. Continue to cook for about 3 minutes, or until the onion softens and becomes translucent.
- Add the Italian seasoning, salt, black pepper, and red pepper flakes. Stir to combine.
- Add the cubed potatoes and chicken broth. Close and lock the lid of the pressure cooker.
- Select "High Pressure" and set the timer for 5 minutes. Allow the pressure to build, which may take 10 to 15 minutes.
- Once the timer is done, release the pressure using the natural release method according to your manufacturer's instructions. This process may take between 10 to 40 minutes.
- Once the pressure is released, carefully unlock and remove the lid.
- Stir the chopped kale into the soup. Select the "Saute" function again and cook uncovered for 2 minutes, stirring occasionally.
- Pour in the half-and-half and stir to combine. Turn off the cooker and serve hot.
