Instant Pot® Zuppa Toscana Recipe

Original recipe (1X) yields 6 servings

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound bulk Italian sausage
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • teaspoon salt
  • teaspoon ground black pepper
  • teaspoon red pepper flakes
  • 4 medium potatoes, cubed
  • 4 cups chicken broth
  • 4 cups chopped kale
  • 1 cup half-and-half

Directions:

  1. Turn on your multi-functional pressure cooker (such as Instant Pot) and select the "Saute" function.
  2. Heat the olive oil in the cooker. Add the Italian sausage and cook, breaking it apart, until it is no longer pink, about 3 minutes.
  3. Stir in the chopped onion and minced garlic. Continue to cook for about 3 minutes, or until the onion softens and becomes translucent.
  4. Add the Italian seasoning, salt, black pepper, and red pepper flakes. Stir to combine.
  5. Add the cubed potatoes and chicken broth. Close and lock the lid of the pressure cooker.
  6. Select "High Pressure" and set the timer for 5 minutes. Allow the pressure to build, which may take 10 to 15 minutes.
  7. Once the timer is done, release the pressure using the natural release method according to your manufacturer's instructions. This process may take between 10 to 40 minutes.
  8. Once the pressure is released, carefully unlock and remove the lid.
  9. Stir the chopped kale into the soup. Select the "Saute" function again and cook uncovered for 2 minutes, stirring occasionally.
  10. Pour in the half-and-half and stir to combine. Turn off the cooker and serve hot.
