Easy to make. And it tastes great. It does get spicier as it sits overnight. It’s a tolerable yet but still surprising. So be prepared. Next time, I am going to back off on the pepperoncini brine to see if that calms it down a bit. This recipe makes a larger quantity suitable for a potluck. Way more than I expected. But we kept it in the fridge for a week. Tomatoes and cheeses began to get soft and breakdown at that point. Next time, I will cut the recipe in half when making it just for my family of three. But this is so much better than store bought pasta salad. Definitely worth the effort and expense.
