Ecuadorian Seco de Pollo Recipe

Beer-Braised Chicken Thighs
Ingredients:
- 6 chicken thighs
- 1 clove garlic, minced
- 1 teaspoon ground black pepper
- 1 teaspoon ground cumin
- 1 teaspoon oregano
- 2 tablespoons vegetable oil
- (12 fluid ounce) can or bottle beer
- 1 tomato, quartered
- 1 red onion, quartered
- 1 bunch cilantro
Directions:
- Season the chicken thighs with minced garlic, black pepper, ground cumin, and oregano.
- In a deep saucepan, heat the vegetable oil over medium-high heat. Add the seasoned chicken thighs and cook them for about 5 minutes, browning both sides.
- While the chicken is cooking, combine the beer, quartered tomato, red onion, and cilantro in a blender. Blend until the mixture is smooth and well combined.
- Pour the sauce over the chicken in the pan, then reduce the heat to low. Let the chicken simmer for 45 minutes to 1 hour, until the chicken is very tender and the flavors have melded together.
