Ecuadorian Seco de Pollo Recipe

Beer-Braised Chicken Thighs

Ingredients:

  • 6 chicken thighs
  • 1 clove garlic, minced
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • 2 tablespoons vegetable oil
  • (12 fluid ounce) can or bottle beer
  • 1 tomato, quartered
  • 1 red onion, quartered
  • 1 bunch cilantro

Directions:

  1. Season the chicken thighs with minced garlic, black pepper, ground cumin, and oregano.
  2. In a deep saucepan, heat the vegetable oil over medium-high heat. Add the seasoned chicken thighs and cook them for about 5 minutes, browning both sides.
  3. While the chicken is cooking, combine the beer, quartered tomato, red onion, and cilantro in a blender. Blend until the mixture is smooth and well combined.
  4. Pour the sauce over the chicken in the pan, then reduce the heat to low. Let the chicken simmer for 45 minutes to 1 hour, until the chicken is very tender and the flavors have melded together.
