Quick Linguine with Turkey Ragu for Two Recipe
Ingredients
- 3 ounces linguine pasta
- 1 teaspoons olive oil
- pound Italian turkey sausage links
- 1 (14.5 ounce) can diced tomatoes, drained (reserve juice)
- 2 cloves garlic, minced
- cup grated Parmesan cheese
- 2 tablespoons heavy cream
- 1 cup baby spinach
- 1 pinch salt, to taste
- Freshly ground black pepper, to taste
Directions
Step 1: Bring a large pot of lightly salted water to a boil. Add linguine and cook until tender but still firm to the bite, about 11 minutes. Drain and set aside, reserving 1/4 cup pasta water.
Step 2: While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Remove the turkey sausage from its casing and crumble it into the skillet. Cook, stirring frequently, until the sausage is browned and cooked through, about 7 minutes.
Step 3: Add the drained tomatoes and minced garlic to the skillet with the sausage. Lower the heat and let the mixture simmer for about 10 minutes, until the tomatoes break down and become soft.
Step 4: Stir in the reserved tomato juice, Parmesan cheese, and heavy cream. Cook for an additional 3-5 minutes, allowing the sauce to thicken slightly.
Step 5: Add the baby spinach to the skillet and cook, stirring, until the spinach wilts, about 3-5 minutes. If the sauce is too thick, add a little reserved pasta water to achieve your desired consistency.
Step 6: Season the sauce with salt and freshly ground black pepper to taste. Serve the sauce over the cooked linguine and enjoy!
