Keto Chicken Parmesan Recipe
Ingredients
- 1 (8 ounce) skinless, boneless chicken breast
- 1 large egg
- 1 tablespoon heavy whipping cream
- 1 ounces pork rinds, crushed
- 1 ounce grated Parmesan cheese
- teaspoon salt
- teaspoon garlic powder
- teaspoon red pepper flakes (Optional)
- teaspoon ground black pepper
- teaspoon Italian seasoning
- 1 tablespoon ghee (clarified butter)
- cup jarred tomato sauce (such as Rao's)
- cup shredded mozzarella cheese
Directions
Step 1: Position the oven rack about 6 inches from the heat source and preheat the oven's broiler.
Step 2: Slice the chicken breast horizontally through the middle, leaving about inch intact at one end. Open the two halves like a book. Use a meat mallet to gently pound the chicken until it's about inch thick.
Step 3: In a bowl, beat the egg and heavy cream together until well combined.
Step 4: In a separate shallow bowl or plate, mix the crushed pork rinds, Parmesan cheese, salt, garlic powder, red pepper flakes (if using), black pepper, and Italian seasoning.
Step 5: Dip each piece of chicken into the egg mixture, making sure its completely coated. Then, press the chicken into the breading mixture, ensuring both sides are thickly coated.
Step 6: Heat ghee in a skillet over medium-high heat. Add the chicken to the pan and cook for about 3 minutes per side, or until the chicken is fully cooked through and the juices run clear. The internal temperature should reach at least 165F (74C). Be gentle with the chicken to keep the breading intact.
Step 7: Transfer the cooked chicken to a baking sheet. Top with tomato sauce and shredded mozzarella cheese.
Step 8: Place the chicken under the broiler for about 2 minutes, or until the cheese is bubbling and lightly browned.
