Ingredients

  • 1 tablespoon olive oil
  • 1 kielbasa sausage, cut into 1-inch pieces
  • 1 onion, diced
  • 1 tablespoon minced garlic
  • 3 (14 ounce) cans vegetable broth
  • 1 (14 ounce) can stewed tomatoes
  • 1 cups chopped carrots
  • 1 (8 ounce) can tomato sauce
  • 1 cup water
  • 1 teaspoons salt-free seasoning blend (such as Mrs. Dash)
  • 1 cups bow-tie pasta (farfalle)

Directions

  1. Step 1: Heat the olive oil in a large pot over medium heat.
  2. Step 2: Add the sausage, onion, and garlic to the hot oil. Cook and stir for about 10 minutes, until the onion is softened and slightly browned.
  3. Step 3: Stir in the vegetable broth, stewed tomatoes, chopped carrots, tomato sauce, water, and seasoning blend. Bring the mixture to a boil.
  4. Step 4: Once boiling, reduce the heat to low and let the soup simmer for 30 minutes, allowing the flavors to meld together.
  5. Step 5: Add the bow-tie pasta to the pot and continue simmering for about 12 minutes, or until the pasta is cooked through but still firm to the bite.

I made Keeper with minor adjustments. I used 2 cans of stewed tomatoes instead of tomato sauce and skipped adding Mrs. Dash or salt. It turned out great without them!

This recipe is fantastic! I browned the kielbasa until it was a deep brown color, then added the onion and garlic to deglaze the dutch oven. After deglazing the pan, I included the carrots, tomatoes, and spices as directed in the recipe. I will definitely be making this again and experimenting with adding other vegetables based on what I have available. A truly excellent recipe!
