Sweet Potato Chicken Casserole Recipe
Sweet Potato and Chicken Casserole

Ingredients
- 1 tablespoon olive oil
- 1 large onion, finely chopped
- 1 clove garlic, chopped
- 2 pounds sweet potatoes, peeled and diced
- 2 carrots, diced
- 4 skinless, boneless chicken breast halves, diced
- 2 tablespoons all-purpose flour
- 1 cup dry white wine
- 2 cups chicken stock
- cup half-and-half or light cream
Directions
Step 1: Preheat the oven to 400F (200C).
Step 2: Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, cooking and stirring until the onion just begins to turn golden brown.
Step 3: Add the diced sweet potatoes and carrots to the skillet. Stir occasionally, cooking for a few minutes until the vegetables start to brown lightly.
Step 4: Move the vegetables to the side of the pan to clear the center. Add the diced chicken to the empty space in the pan. Stir the chicken and cook until it is seared on all sides.
Step 5: Sprinkle the flour over the chicken and vegetables, then stir everything together to combine.
Step 6: Gradually pour in the chicken stock while stirring, scraping up any bits of food from the bottom of the pan as you do so. Once the stock is incorporated, stir in the dry white wine.
Step 7: Transfer the contents of the skillet to a casserole dish. Cover with a lid or foil.
Step 8: Bake in the preheated oven for 1 hour, or until the vegetables are tender and the chicken is cooked through.
Step 9: Once removed from the oven, let the casserole cool for a few minutes before stirring in the half-and-half or light cream. This helps prevent the cream from curdling.

I made 2 servings of this recipe, opting to skip the cream and white wine. I decided to include a diced apple and 2 additional carrots, and increased the garlic to 2 cloves without it being too overpowering. Following the suggestions of others, I spiced it up with a generous sprinkle of pumpkin pie spice (cinnamon, ginger, and nutmeg). By reducing some of the liquid ingredients, I ended up with a delightful sauce at the bottom. The addition of the apple complemented the taste of the chicken broth beautifully. We enjoyed it on its own, without any rice or bread. This dish is perfect for fall. My husband and I absolutely adored it! With the extra vegetables and fruit, and without the cream, it feels like a healthy choice too.

I mixed in a cup of brown rice before transferring the mixture to the casserole dish, which made it less watery. Following another reviewer's suggestion, I topped it with cinnamon and nutmeg. The result was absolutely delicious!

I decided to modify the recipe based on recommendations from other reviewers by reducing the amount of liquid to create a thicker casserole. Additionally, I included cinnamon and nutmeg to enhance the flavors before baking it. The aroma of the Vietnamese cinnamon I used from King Arthur flour was truly exceptional as it cooked. Due to having only two chicken breasts available, I halved the recipe and utilized 2/3 cup of chicken broth as the sole liquid. After just thirty minutes in the oven, the dish was ready and incredibly flavorful. I will definitely prepare this dish again, pairing it with fresh homemade bread and butter along with a side salad.

This recipe is amazing! I omitted the wine and cream, used only 2 chicken breasts, and followed a recommendation from the comments to add a diced apple and an extra carrot. It only required 30 minutes of baking time and turned out to be a delightful stew. I enjoyed serving it with hot steamed white rice heaped onto the stew. It was a simple and delicious meal - I will definitely be making this again!

I omitted the wine and cream, and instead incorporated flour into the chicken broth. I opted for just 1 cup of broth to ensure a moist baked dish. Following a suggestion from another reader, I included cinnamon and nutmeg, and next time I plan to add celery. The dish turned out delicious!
