Easy Sweet Potato Dumplings Recipe

Ingredients

  • 2 (8 ounce) packages refrigerated crescent rolls
  • 32 ounces frozen sweet potato patties
  • 1 cup finely chopped walnuts
  • 1 cups water
  • 1 cups sugar
  • cup margarine
  • 1 teaspoons ground cinnamon
  • teaspoon ground nutmeg

Directions

  1. Unroll the crescent rolls and lay them flat on a work surface.
  2. Cut the sweet potato patties in half.
  3. Take one half-patty and roll it in a crescent roll, stretching the dough to cover the patty completely and form a dumpling. Repeat with the remaining patties and rolls.
  4. Place the walnuts on a plate. Dip each dumpling into the chopped walnuts, pressing down to ensure the top is coated.
  5. Arrange the coated dumplings in a 9x12-inch glass baking dish, nut-side up.
  6. Preheat the oven to 325F (165C).
  7. In a heavy saucepan, combine water, sugar, margarine, cinnamon, and nutmeg. Cook over medium-low heat, stirring occasionally, until the sugar and margarine are dissolved (about 3 to 5 minutes).
  8. Pour the prepared sauce evenly over the dumplings in the baking dish.
  9. Bake the dumplings in the preheated oven for 20 to 25 minutes, or until the sauce is bubbling and the dough is golden brown.

Cook's Notes

This recipe can easily be halved. You can also make smaller appetizer-sized portions by cutting the crescent rolls in half and quartering the sweet potato patties, resulting in 32 pieces. Feel free to use any nuts you prefer for coating the dumplings.

I prepared this dish for Thanksgiving and it turned out fantastic. A couple of things to note: the frozen sweet potato patties I used came in packs of 8, so I needed 2 packs (32oz total) for a total of 16 patties. Each can of crescent rolls has 8 rolls, so 2 tubes gives you 16 rolls. I placed a full sweet potato patty inside each crescent roll. Also, I found that baking it for an extra 15-20 minutes compared to the recipe time works better. The top of the rolls bakes up like crescent rolls, while the bottom remains a bit doughy due to being in the liquid - this is intentional (just so you know). These rolls are incredibly delicious and easy to prepare. They have become a special occasion favorite for me, and I believe they will be a staple in our Thanksgiving menu from now on.
