Ingredients

This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.

Original recipe (1X) yields 6 servings

  • 2 tablespoons butter
  • 1 onion, chopped
  • cup green bell pepper
  • 1 medium head cabbage, cored and coarsely chopped
  • cup water
  • 1 clove garlic, crushed
  • 2 sprigs fresh thyme
  • 1 Scotch bonnet chile, seeded and thinly sliced (Optional)
  • Salt and ground black pepper to taste

Directions

Step 1: Melt butter in a skillet over medium-high heat.

Step 2: Add onion and bell pepper; cook and stir for 3 to 5 minutes until slightly softened.

Step 3: Add cabbage, water, garlic, and thyme; bring to a boil.

Step 4: Reduce heat to medium-low, cover the skillet, and steam until the cabbage is tender, about 8 to 10 minutes.

Step 5: Stir in the Scotch bonnet chile (if using) until warmed through.

Step 6: Season with salt and pepper to taste.

Cooks Note

For a less spicy flavor, leave the Scotch bonnet chile pepper whole instead of chopping it.

I made a few changes to suit my personal taste. Cooked bell peppers aren't a favorite in our household, and I couldn't find scotch bonnet peppers this time of year, plus they're too spicy for us anyway. So, I substituted fresh jalapeno for the bell peppers to add a manageable level of heat. It turned out great! However, I made two cabbage dishes last night, and the other one was preferred for one reason: beer. While I enjoyed the spiciness of this recipe, I suggest using beer instead of water for a richer flavor that pairs well with the cabbage. Using pre-shredded cabbage from a bag is a time-saver, but be sure to adjust the cooking time accordingly. I will definitely make this recipe again, but with beer next time.

This dish is fantastic as a side or main meal, especially when you add some turkey kielbasa. I substituted Jalapeño Peppers for Bonnet Chile Pepper and drizzled some Louisiana hot sauce for an extra kick! It's packed with flavor, satisfying, and surprisingly low in calories.
