Slow-Cooked Stew Meat Chili Recipe

Ingredients

  • 1 tablespoons vegetable oil
  • pound cubed beef stew meat
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 2 tablespoons all-purpose flour
  • 1 (28 ounce) can diced tomatoes
  • 1 (16 ounce) can black beans, rinsed and drained
  • 1 (16 ounce) can kidney beans, rinsed and drained
  • 1 cups beef broth, divided
  • 1 large onion, chopped
  • 1 small green or red bell pepper, chopped
  • cup chopped fresh parsley
  • 2 tablespoons barbecue sauce
  • 1 tablespoons brown sugar
  • 2 cloves garlic, minced (or more to taste)
  • teaspoon salt

Directions

  1. Gather all ingredients.
  2. Heat the oil in a large skillet over medium-high heat. Add the beef stew meat and cook, stirring occasionally, until browned, about 3 to 5 minutes.
  3. Add chili powder and cumin to the beef. Cook and stir for about 1 minute, until fragrant.
  4. Stir in the flour and cook for another minute to incorporate and thicken the mixture.
  5. Transfer the browned beef mixture to a large slow cooker.
  6. Add the diced tomatoes, black beans, kidney beans, 1 cups beef broth, onion, bell pepper, parsley, barbecue sauce, brown sugar, garlic, and salt to the slow cooker. Stir everything until well combined.
  7. Cover and cook on low for 6 to 8 hours, stirring occasionally. The beef should be tender when done.
  8. If the chili becomes too thick during cooking, you can thin it out by adding the remaining beef broth, adjusting to your preferred consistency.

So good! Most of my family doesn’t like it too hot so I omitted the cayenne pepper and I used crushed tomatoes instead of diced. Everyone had two helpings! I will definitely make again!

Doubled most of the recipe (tripled the garlic) and left out the barbecue sauce - only added a sprinkle of brown sugar. It was definitely too thin, but when it was done slow cooking I added about a quarter cup of flour mixed with cold water and it thickened up perfectly. Spooned over macaroni and topped with shredded cheddar and corn bread, and the result was DELICIOUS!!! Super simple and the flavors were perfect. I definitely recommend if you’re looking for a chili recipe that’s not too over-the-top spicy and doesn’t have anything weird in it. Like a lot of the other reviews I recommend skipping the barbecue sauce altogether.

Some saying the chili was too thin, try adding a can of refried beans instead of regular beans. I also deglazed the pan with the broth and used double the meat and used horseradish mustard instead of barbecue sauce. Cooked 10 hours. Very good.

I really liked this when I made it a couple of weeks ago, so I made it again. This time, I doubled the recipe so I had plenty to freeze. I also used cubed pork and beef 50/50 which added a nice depth to the meat flavors. I think next time I'm going to hold off adding the peppers until about 2 hours before serving to keep just a bit of crispiness.

I added a pound of ground Wagyu beef, and it was amazing!! My GF gave it a 10/10, and I would second this decision. I slow cooked for about 8 hours. Are a little and then refriged all of it. We reheated some today for lunch and it was better than it was last night! I would definitely recommend this recipe, and adding the Wagyu really sets it off.

It was sooooo good! The only thing I did differently was sub the BBQ sauce with a mix of mustard and worsteshire sauce, which added an extra zing without too much sweet. Also some cayenne sprinkled halfway through cooking helped the spice. Slow and low for as long as possible and it is awesome , this might become my keeper chili recipe!

Wonderful flavors. I added the chili powder and cumin to my flour and then tossed the beef into that and then browned with butter in my pot. Deglazed the pot with the beef broth and then added the rest of my ingredients. I used white kidney beans and pinto beans, as that's what I had in my pantry. I didn't add bbq sauce as I'm not a fan. Will make again for sure.

I’ve never made chili with stew meat so I used this recipe as a guide. I cut the stew meat into smaller pieces, I only used 1/2 cup of broth which I made with bouillon, I prefer a lot more cumin so I added a tablespoon instead of a teaspoon, I did not add parsley or bbq sauce. After all of those tweaks it was was very good!

Too sweet for me. The bbq sauce and sugar made it way too sweet. I'm all for adding a pinch of sugar to counter the savory, but this was over the top for my taste and the 'tangy' taste of the bbq sauce changed the flavor from chili to something else. It kind of ruined it for me. Just not quite what I was looking for, but thanks anyway!

Very good but the slow cooker was filled to the brim. The original recipe included 28 oz of diced tomatoes; I changed the recipe to 14 oz. and substituted a jar of hot picante. I also added a can of corn, drained. I like my chili thick so next time I'll also drain the picante and diced tomatoes.

This recipe is easy and delicious! Who could ask for anything more!? The only thing I did differently was added a can of dark red kidney beans because I like more beans in my chili and I didn’t have another can of black beans. But oh my gosh it is sooooo good!!!

This was the best beef stew I’ve made! I didn’t have any BBQ sauce, so I followed a suggestion from an another review and used mustard powder and Worcestershire sauce instead……so good! 😋
