Pesto Cheesy Chicken Rolls Recipe

  • 4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
  • 1 cup prepared basil pesto
  • 4 thick slices mozzarella cheese
  • Cooking spray

Directions

Step 1: Preheat your oven to 350F (175C). Lightly spray a baking dish with cooking spray to prevent sticking.

Step 2: Spread 2 to 3 tablespoons of basil pesto onto each flattened chicken breast, ensuring an even coating.

Step 3: Place one slice of mozzarella cheese over the pesto on each chicken breast.

Step 4: Carefully roll up each chicken breast, ensuring it is tightly wrapped, and secure with toothpicks to hold the roll in place.

Step 5: Arrange the chicken rolls in the prepared baking dish, making sure they are evenly spaced.

Step 6: Bake the chicken uncovered in the preheated oven for 45 to 50 minutes. The chicken should be nicely browned and the juices should run clear when pierced.

This dish was a hit with everyone! I coated the casserole dish with olive oil, layered chopped sun-dried tomatoes, pesto, and shredded mozzarella cheese, then rolled it up. I added a touch of pesto on top before baking, and the result was absolutely fantastic!

This dish turned out amazing! I was looking for a recipe to pair with bruschetta, which I made to use up my surplus of tomatoes. I made a few adjustments, as I'm not a big fan of pesto. Instead, I found a red chili pesto at the store and used that along with shredded mozzarella cheese. After lightly seasoning both sides of the chicken breast with salt and pepper, I spread a layer of red chili pesto and cheese on top. I then dipped the chicken in beaten egg and coated it with a mixture of garlic herb breadcrumbs, grated parmesan, extra garlic powder, and a pinch of salt and pepper. Before baking at 375°F for 35 minutes, I spritzed the tops of the chicken rolls with olive oil spray. The result was perfectly browned and delicious. I made a delicious dish using fresh basil, garlic, and onion, and opted for Swiss cheese instead of mozzarella. I coated the chicken in a breadcrumb seasoning before baking, covering it with foil for the first 20 minutes and then uncovering it for the remainder of the cooking time. I served this flavorful meal with creamy mashed potatoes and gravy, along with a side of carrot casserole.

I made a different version of this dish for dinner tonight, surprisingly. Instead of cheese, I opted for spinach, pesto, low-fat sour cream, rehydrated sun-dried tomatoes, garlic, and seasoning. I served it with Whole Wheat Rotini in basil pesto, topped with some parmesan. I will definitely try it with cheese next time, as it looks fantastic melted on top.

My family absolutely adored this chicken! I decided to switch up my cooking method a bit by searing it in a pan to get a nice golden brown crust on the outside before finishing it off in the oven. This is my go-to way of cooking chicken as I find it enhances the flavor and juiciness, just a personal preference of mine. Next time, I might experiment with breading like some others have recommended.
