Cathy's Amazing Fish Chowder Recipe
Ingredients
- 1 pound sliced bacon
- 1 large onion, chopped
- 5 medium potatoes, peeled and diced
- 2 cups water, or as needed
- 1 pounds cod fillets, cut into 1 inch cubes
- 1 (12 fluid ounce) can evaporated milk
- cup whole milk
- 2 tablespoons butter
- Salt and pepper to taste
Directions
Step 1: In a large stockpot, cook the bacon over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Once cooked, drain on a paper towel-lined plate and crumble. Set aside.
Step 2: Remove most of the bacon grease from the pot, leaving about 1 tablespoon. Add the chopped onion to the reserved grease and cook over medium heat until tender, around 5 minutes.
Step 3: Add the diced potatoes to the pot, then pour in enough water to cover them. Bring to a boil and cook until the potatoes are nearly tender, about 5 minutes.
Step 4: Add the cubed fish fillets, evaporated milk, whole milk, and butter. Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes.
Step 5: Season with salt and pepper to taste. Ladle the chowder into bowls and top with the crumbled bacon.
