Easy Ramen with Chicken and Teriyaki Sauce
This quick and tasty dish brings together ramen noodles, chicken, and sauted vegetables in a savory teriyaki sauce for a flavorful and filling meal. Perfect for busy nights when you crave something easy yet satisfying.
Ingredients
- 2 (3-ounce) packages ramen noodles (discard flavor packets)
- 1 tablespoon butter
- 2 medium carrots, peeled and thinly sliced
- 1 medium zucchini, chopped
- 1 medium onion, chopped
- 2 cups cooked, shredded chicken breast
- 1 tablespoon teriyaki sauce (or more to taste)
- Salt and ground black pepper to taste
Directions
Step 1: In a large skillet, add 4 cups of water and bring it to a boil. Once boiling, add the ramen noodles and cook for about 5 minutes, or until the noodles are soft. Drain the noodles and set them aside.
Step 2: While the noodles are cooking, melt the butter in a separate skillet over medium heat. Add the sliced carrots, chopped zucchini, and onion. Saut the vegetables for about 5 minutes, or until they soften.
Step 3: Add the shredded chicken, teriyaki sauce, salt, and pepper to the skillet with the vegetables. Stir well and cook for an additional 3 to 5 minutes, until the chicken is heated through and the sauce has thickened slightly.
Step 4: Once the chicken and vegetables are ready, add the drained ramen noodles to the skillet. Toss everything together to combine. Taste and adjust the seasoning by adding more teriyaki sauce, salt, or pepper if needed.
