- 1 (15.5-ounce) can garbanzo beans, drained and rinsed
- 1 cup mozzarella pearls
- 2/3 cup chopped red bell pepper
- 1/3 cup chopped red onion
- 1/3 cup chopped pepperoncini
- 1/3 cup thinly sliced salami
- 1/3 cup thinly sliced hot capicola (optional)
- 1/3 cup thinly sliced fresh basil
Directions
- In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Italian seasoning, garlic, salt, and pepper. Set the dressing aside.
- In a large bowl, combine the cannellini beans, garbanzo beans, mozzarella pearls, red bell pepper, red onion, pepperoncini, salami, capicola (if using), and fresh basil.
- Pour the dressing over the salad and toss well to combine all the ingredients evenly.

I absolutely adored this recipe! I savored every bite over the course of a few days (of course, haha). Sadly, my husband and kids weren't as big fans, simply because it's not their cup of tea. I stuck to the instructions to a tee. The deli was out of capicola, so I had to skip it, but I'm sure it would have taken this dish to the next level. It's definitely a five and a half stars-worthy recipe. This will be my go-to treat and a must-have for any BBQ or party.
