  • 8 cups chicken or ham stock
  • 4 cups cubed country ham
  • 4 tablespoons dried rosemary, divided
  • 2 pounds bacon, diced
  • 6 green onions, diced
  • 3 leeks, diced
  • 2 large onions, diced
  • 3 cloves garlic, minced
  • 6 large potatoes, cubed
  • 1 pound carrots, cubed
  • 1 cups heavy cream

Directions

Follow these steps to create a delicious, comforting dish.

  1. Step 1: Heat the stock in a large pot over medium heat, allowing it to come to a simmer.
  2. Step 2: Stir in the cubed ham and 2 tablespoons of dried rosemary. Let the mixture simmer gently.
  3. Step 3: In a separate large skillet, cook the diced bacon over medium heat, turning occasionally, until it becomes crispy. Once crispy, use a slotted spoon to transfer the bacon to the pot with the stock. Discard half of the bacon grease, but reserve the remaining grease in the skillet.
  4. Step 4: Return the skillet to the stove over medium heat. Add the diced green onions, leeks, onions, and minced garlic to the skillet. Stir and cook the vegetables until they are tender, then transfer everything to the pot with the stock mixture.
  5. Step 5: Add the cubed potatoes, carrots, and the remaining 2 tablespoons of rosemary to the pot. Stir to combine, then allow the mixture to simmer until the vegetables are tender, approximately 20 minutes.
  6. Step 6: Once the vegetables are tender, remove the pot from the heat. Stir in the heavy cream, mixing thoroughly.
