Italian Tortellini Salad Recipe
Yields: 6 servings
Ingredients:
- 20 ounces refrigerated cheese tortellini
- 1 1/2 cups halved cherry tomatoes
- 3/4 cup halved small fresh mozzarella balls
- 1 English cucumber, halved and sliced
- 3/4 cup diced red or yellow bell pepper
- 1 (5 ounce) package mini pepperoni
- 1/2 cup roughly chopped banana pepper rings
- 1/2 cup diced red onion
- 1/2 cup sliced black olives
- 2 tablespoons minced Italian parsley
- Salt and freshly ground black pepper to taste
- 1 cup light Italian salad dressing (store bought or homemade)
- 1/3 cup grated Parmesan cheese
Directions:
- Fill a large pot with lightly salted water and bring to a rolling boil. Add tortellini and stir, bringing it back to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, about 3 minutes. Avoid overcooking to prevent the tortellini from unfolding.
- Drain the tortellini well, cool to room temperature, and transfer to a large bowl.
- In a separate bowl, combine cherry tomatoes, mozzarella balls, cucumber, bell peppers, pepperoni, banana peppers, red onion, black olives, parsley, salt, and pepper. Add this mixture to the tortellini.
- Drizzle the Italian dressing over the salad and gently toss to coat all ingredients evenly.
- Refrigerate the salad for at least 1 hour before serving to allow the flavors to meld together.
- Before serving, give the salad a final stir and garnish with grated Parmesan cheese. Serve chilled.
- Store any leftovers in an air-tight in the refrigerator for up to 5 days.

Origin Story
The Italian Tortellini Salad has its roots in Italy, where tortellini, a small ring-shaped pasta filled with a mixture of meat or cheese, has been enjoyed for centuries. The dish combines the rich tradition of Italian pasta with fresh, vibrant vegetables and zesty dressing, creating a refreshing summer dish that is enjoyed year-round. While tortellini itself is a famous component in Italian cuisine, particularly in the Emilia-Romagna region, this salad variation has gained popularity globally for its versatility and refreshing flavors, often served at picnics, barbecues, or casual gatherings.
Regional Variations
While the concept of tortellini salad is widely loved across Italy, it does vary by region. In Emilia-Romagna, where tortellini originated, you might find tortellini prepared in a more traditional fashion, served in broth or with a rich sauce. However, in southern regions, lighter versions, such as the salad, are more common, incorporating local vegetables like cherry tomatoes, cucumbers, and olives. The beauty of tortellini salad lies in its adaptability: different vegetables, meats, and dressings can be added depending on what's available, making it a true reflection of regional tastes.
Differences from Similar Dishes
Though it may resemble other pasta salads, such as Greek or Mediterranean pasta salads, the Italian Tortellini Salad stands out due to the unique inclusion of tortellini pasta. Unlike traditional pasta salads that may use rotini or penne, tortellini's stuffed nature adds a rich, savory texture that other pasta varieties cannot replicate. Additionally, the balance of flavorscreamy mozzarella, zesty banana peppers, and spicy mini pepperonigives it a distinctive Italian flair. The use of light Italian dressing, rather than heavier mayonnaise-based dressings, offers a refreshing twist and allows the fresh ingredients to shine.
Where It's Typically Served
Italian Tortellini Salad is a perfect dish for outdoor events like barbecues, picnics, and potlucks. Its a go-to recipe for summer gatherings, where its light yet satisfying nature can be enjoyed as a side dish or a main course. Its portability and ease of preparation make it a popular choice for those hosting casual parties or family get-togethers. In Italy, similar salads are often served as a first course (antipasto) or a light lunch during the warmer months, providing a refreshing and filling option without being too heavy.

This was really good. I didn’t add black olives or parsley (didn’t have them on hand). I used Olive Garden Italian dressing instead of a lighter version, and it was delicious. Will definitely make this again.
