  • 1 pound lean ground beef
  • Salt and pepper to taste
  • 3 (15 ounce) cans dark red kidney beans
  • 3 (14.5 ounce) cans Mexican-style stewed tomatoes
  • 2 stalks celery, chopped
  • 1 red bell pepper, chopped
  • cup red wine vinegar
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1 dash Worcestershire sauce
  • cup red wine

Directions

  1. Heat a large skillet over medium-high heat. Add ground beef and cook, stirring occasionally, until evenly browned, about 5 to 7 minutes. Drain off any excess grease, then season with salt and pepper to taste.
  2. Transfer the browned beef to a slow cooker.
  3. Add the kidney beans, stewed tomatoes, chopped celery, bell pepper, and red wine vinegar to the slow cooker. Stir to combine all ingredients evenly.
  4. Season the mixture with chili powder, cumin, parsley, basil, and Worcestershire sauce. Stir again to evenly distribute the seasonings.
  5. Cover and cook on Low for 8 hours or High for 6 hours, stirring occasionally if desired. During the last 2 hours of cooking, pour in the red wine and mix well.
