Creamy Keto Taco Soup with Ground Beef Recipe

- 1 pound ground beef
- cup chopped onion
- 2 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 teaspoon chili powder
- 1 (8 ounce) package cream cheese, softened
- 2 (14.5 ounce) cans beef broth
- 2 (10 ounce) cans diced tomatoes and green chiles (such as RO*TEL)

- 2 teaspoons salt, or to taste
Directions
Step 1: Gather all ingredients.
Step 2: In a large soup pot, combine ground beef with chopped onion and minced garlic. Cook over medium-high heat, stirring frequently, for 5 to 7 minutes until the beef is browned and crumbly.
Step 3: Drain and discard any grease from the pot.
Step 4: Add the ground cumin and chili powder to the beef mixture. Cook for an additional 2 minutes, stirring occasionally.
Step 5: Drop the softened cream cheese into the pot in small pieces. Use a large spoon to mash it into the beef mixture until no white spots remain, about 3 to 5 minutes.
Step 6: Stir in the beef broth, diced tomatoes and green chiles, heavy cream, and salt. Continue to cook over medium heat until everything is heated through, about 10 minutes.
