Cabbage Curry Recipe

- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 small yellow onion, thinly sliced
- 1 cup julienned carrots
- 1 clove garlic, minced
- 1 small head cabbage, sliced
- cup fresh shredded coconut
- 2 tablespoons Indian curry powder
- cup coconut milk
- Salt and pepper to taste
- cup diced fresh tomato
- cup chopped green onions
- cup chopped cilantro
Directions
Follow these steps to create a delicious stir-fry with a burst of flavor:
- Place a large skillet or wok over high heat. Add olive oil and butter, heating until the butter starts to smoke.
- Add the sliced onion, julienned carrots, and minced garlic to the skillet. Cook, stirring frequently, until the onion begins to soften, about 1 minute.
- Add the sliced cabbage, shredded coconut, and curry powder. Stir-fry the mixture for another 2 minutes, allowing the flavors to meld together.
- Reduce the heat to medium-low and pour in the coconut milk. Season with salt and pepper to taste.
- Cover the skillet and cook until the cabbage reaches your desired level of tenderness.
- Once cooked, serve the dish by sprinkling with fresh diced tomato, chopped green onions, and cilantro for a refreshing finish.

Prepared until the liquid had mostly evaporated, this fried cabbage dish was a hit with my family. Using a napa cabbage from my mom's garden, I made just a couple of tweaks: swapped fresh coconut for unsweetened dried coconut from an Indian store, and omitted cilantro (since my husband isn't a fan), although it would have been a nice addition. Could have used a bit more coconut milk in my view, but still thoroughly enjoyed it! Delicious when paired with a side of brown rice and millet mixture.
