Cheesy Chicken Florentine Casserole Recipe

Ingredients
- 4 (4 ounce) skinless, boneless chicken breast halves

- 2 tablespoons unsalted butter
- 2 cups shredded Parmesan cheese
- 1 pints heavy cream
- 1 (10.5 ounce) can condensed cream of broccoli soup
- 3 tablespoons chopped fresh oregano, or to taste
- 2 tablespoons chopped fresh basil, or to taste
- 2 tablespoons chopped fresh parsley, or to taste
- 1 teaspoon garlic powder, or to taste
- Salt and ground black pepper to taste
- 1 (10 ounce) package frozen chopped spinach, thawed and drained
- 2 cups shredded mozzarella cheese
Directions
- Preheat your oven to 350F (175C). Place the chicken breasts on a parchment-lined baking sheet.
- Bake the chicken in the preheated oven for 15 to 20 minutes, or until just light pink in the center (the chicken will not be fully cooked yet).
- While the chicken is baking, melt cup plus 2 tablespoons of butter in a skillet over medium heat. Stir in the Parmesan cheese until it melts smoothly.
- Add the heavy cream, condensed cream of broccoli soup, oregano, basil, parsley, garlic powder, salt, and black pepper to the skillet. Stir everything together and reduce the heat to low. Let the sauce simmer and thicken for about 5 minutes.
- In a 9-inch square baking dish, arrange the thawed and drained spinach evenly at the bottom.
- Pour about 1 cups of the prepared sauce over the spinach.
- Place the partially cooked chicken breasts on top of the spinach layer.
- Cover the chicken with the remaining sauce, then sprinkle with shredded mozzarella cheese.
- Return the dish to the oven and bake for an additional 20 to 25 minutes, or until the dish is bubbly and the cheese is lightly browned on top.
Cook's Note
You can replace the full can of cream of broccoli soup with a half-can of cream of broccoli and a half-can of cream of chicken soup if preferred.
