Beef, Bean, and Beer Chili Recipe
Ingredients
- 1 tablespoon vegetable oil
- 2 pounds lean ground beef
- 1 onion, diced
- 2 teaspoons salt
- 3 tablespoons ground ancho chile powder
- 3 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon ground black pepper
- 1 teaspoon ground cinnamon
- 1 (12 ounce) bottle beer
- 2 cups water, or as needed
- 1 cup tomato puree
- 1 teaspoon unsweetened cocoa powder
- teaspoon dried oregano
- teaspoon ground cayenne pepper
- 2 (12 ounce) cans pinto beans, drained and rinsed well
- cup diced poblano pepper
Directions
Step 1: Heat a large pot over high heat and drizzle in the vegetable oil.
Step 2: Add the ground beef, diced onion, and salt to the hot oil. Stir and cook until the beef becomes crumbly and browned, and any released liquid evaporates (approximately 4 minutes).
Step 3: Reduce the heat to medium-high. Add the ancho chile powder, minced garlic, ground cumin, paprika, black pepper, and ground cinnamon to the pot. Cook and stir until the mixture starts to darken, about 3-4 minutes.
Step 4: Pour in the beer and stir well to combine. Then, add the water, tomato puree, cocoa powder, dried oregano, and ground cayenne pepper. Stir again to incorporate all the ingredients.
Step 5: Bring the mixture to a simmer. Once it reaches a simmer, reduce the heat to medium-low and cook for 30 minutes.
Step 6: After 30 minutes, add the drained pinto beans and diced poblano pepper to the pot. Continue simmering until the peppers become tender and the flavors have melded together, approximately 30 minutes. If the chili becomes too thick, add more water to reach your desired consistency.
Chef's Note
For this recipe, I used ancho chile powder, but you can substitute it with any high-quality ground chili powder. I also used poblano pepper, but a combination of jalapeo and green bell pepper works great as well!
