Date Night Blackened Salmon Pasta Recipe

Salmon and Spaghetti with Panko and Spinach

Ingredients

  • Salmon:
    • Nonstick cooking spray
    • 1 teaspoon sweet paprika
    • 1 teaspoon ground cumin
    • teaspoon salt
    • teaspoon granulated onion
    • teaspoon granulated garlic
    • teaspoon black pepper
    • teaspoon seafood seasoning (such as Old Bay)
    • 2 (6 ounce) salmon fillets
  • Pasta:
    • 1 (8 ounce) package spaghetti
    • 2 tablespoons olive oil
    • 1 clove garlic, minced
    • cup panko bread crumbs
    • 2 cups baby spinach
    • 2 tablespoons butter
    • 1 pinch red pepper flakes
    • 2 tablespoons freshly grated Parmesan cheese, or to taste

Directions

Step 1: Preheat the oven to 350F (175C). Line a baking sheet with foil and lightly coat the foil with nonstick cooking spray.

Step 2: In a small bowl, combine the sweet paprika, cumin, salt, granulated onion, granulated garlic, black pepper, and seafood seasoning. Set aside 1 teaspoon of the seasoning mixture for the pasta sauce.

Step 3: Rub the remaining seasoning over the salmon fillets and place them on the prepared baking sheet. Bake for 20 to 25 minutes, or until the salmon flakes easily with a fork.

Step 4: Meanwhile, bring a large pot of lightly salted water to a boil. Cook the spaghetti according to the package instructions, about 12 minutes, until al dente. Drain and set aside.

Step 5: While the pasta cooks, heat olive oil in a skillet over medium heat. Once shimmering, add the minced garlic and saut for about 30 seconds until golden and fragrant.

Step 6: Add the panko bread crumbs and the reserved 1 teaspoon of seasoning. Stir continuously, making sure not to burn the crumbs, until they are lightly toasted, about 30 seconds. Remove from the heat and transfer the panko to a small bowl.

Step 7: Place the spinach in a colander and drain the cooked spaghetti over the spinach. The hot water will immediately wilt the spinach.

Step 8: Transfer the drained pasta and wilted spinach to the skillet. Add the butter and red pepper flakes, tossing everything together to coat.

Step 9: Divide the pasta and spinach mixture evenly between two bowls. Top each bowl with a salmon fillet, a sprinkle of toasted panko, and freshly grated Parmesan cheese. Serve immediately.
