Beth's Baked Fish Recipe

  • cup unsalted butter, melted
  • teaspoon seasoned salt
  • teaspoon dried dill weed
  • teaspoon garlic powder
  • 2 (4 ounce) cod fillets

Directions

Step 1: Preheat the oven to 350F (175C).

Step 2: In a small bowl, stir together melted butter, seasoned salt, dill weed, and garlic powder until well combined.

Step 3: Pour the butter mixture into a large baking dish.

Step 4: Add the cod fillets to the dish and gently turn them to coat both sides with the butter mixture.

Step 5: Bake the fillets in the preheated oven for 20 to 30 minutes, or until the cod flakes easily with a fork.

Straightforward and delicious recipe to put together. I substituted Earth Balance butter and followed the rest of the recipe as is. The flavor was wonderful, although I think next time I'll cut the butter amount in half. I also plan to just brush the butter on both sides of the fish. The dill seasoning was just right for our taste, not overpowering. However, we found the butter to be a bit excessive, overpowering the fish and other seasonings. I will definitely make this again for an easy and tasty way to prepare cod or any other white fish. Appreciate the recipe!

I found this recipe to be quick, easy, and full of flavor. I prepared it with sole fillets in a tagine, which resulted in a lot of delicious juice. Next time, I will reduce the amount of seasonings and butter by half for the same amount of fish, as I felt they were a bit overpowering for the delicate flavor of sole. However, I believe the seasonings would be perfect for cod. Thanks for sharing this recipe!
