Ground Beef Casserole with Brown Rice Recipe
Ingredients
- 1 pound lean ground beef
- 3 cups cooked brown rice
- 2 cups frozen peas
- 1 (10.5 ounce) can condensed cream of celery soup
- cup milk
- 2 tablespoons soy sauce
- 1 clove garlic, minced
- 1 cup shredded Cheddar-Monterey Jack cheese blend, or to taste
Directions
Step 1: Gather all the ingredients and preheat your oven to 350F (175C).
Step 2: Heat a large skillet over medium-high heat. Add the ground beef and cook, stirring often, until browned and crumbly, about 5-7 minutes. Once cooked, drain any excess grease.
Step 3: Transfer the cooked beef to a large bowl. Add the brown rice, frozen peas, cream of celery soup, milk, soy sauce, and minced garlic. Stir well to combine all the ingredients.
Step 4: Transfer the mixture into a 9x13-inch baking dish. Sprinkle the shredded Cheddar-Monterey Jack cheese over the top.
Step 5: Cover the baking dish with a lid or aluminum foil. Place it in the preheated oven and bake for 15-20 minutes, or until the casserole is heated through and bubbly.
Step 6: Once done, remove from the oven and let it sit for a few minutes before serving.
Cook's Note
This dish freezes well! I like to make a larger batch and freeze the mixture (without the cheese) in gallon-sized resealable bags. This makes it easy for quick meals later on.
