Roasted Sausage and Vegetables Sheet Pan Dinner Recipe

Ingredients

  • 6 tablespoons extra-virgin olive oil, divided
  • 6 links pork sausage (such as Isernio's)
  • 2 large baking potatoes, peeled and cut into 1/4-inch thick half-rounds
  • 1 large onion, thinly sliced
  • 1 yellow bell pepper, seeded and cut into 1/4-inch strips
  • 1 orange bell pepper, seeded and cut into 1/4-inch strips
  • 1 red bell pepper, seeded and cut into 1/4-inch strips
  • 1 medium zucchini, sliced 1/4-inch thick
  • 2 tablespoons chopped fresh oregano
  • Salt and ground black pepper to taste

Directions

Step 1: Preheat the oven to 350F (175C).

Step 2: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausage and cook until lightly browned, about 2 minutes per side. Remove from the pan and set aside.

Step 3: In a large mixing bowl, combine the potatoes, onion, bell peppers, zucchini, and chopped oregano. Drizzle with the remaining 5 tablespoons of olive oil and season generously with salt and black pepper. Toss the mixture to ensure everything is evenly coated.

Step 4: Transfer the browned sausages and the vegetable mixture to a large rimmed baking sheet or roasting pan. Arrange everything in a single layer. Do not cover.

Step 5: Place the baking sheet in the preheated oven and bake for approximately 50 minutes. Stir the ingredients occasionally to ensure even cooking. The vegetables should be tender and lightly browned by the end of the baking time.

Step 6: Once cooked, remove from the oven and taste for seasoning. Add more salt and pepper if needed before serving.

Cook's Note

You can use any type of sausage you prefer. If you don't have fresh oregano, you can substitute with 1 teaspoon of dried oregano.
