Ingredients

  • 4 medium onions, chopped
  • 1 cups chicken broth
  • 2 cloves garlic, minced
  • 5 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 1 cup milk
  • 1 cup heavy cream
  • 6 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon seafood seasoning (such as Old Bay)
  • 1 teaspoon salt
  • teaspoon cayenne pepper
  • 24 ounces imitation lobster meat
  • cup white wine
  • 1 pinch ground paprika, or to taste (Optional)

Directions

Step 1: In a large pot, cook the chopped onions and cup of chicken broth over medium heat for 5 minutes, stirring occasionally. Add the minced garlic and cook for another 2 minutes.

Step 2: Reduce the heat to low, add the remaining chicken broth, and bring the mixture to a simmer.

Step 3: While the broth is simmering, melt the butter in a medium saucepan over low heat. Once melted, whisk in the flour to create a smooth, creamy mixture.

Step 4: Gradually add the roux (butter-flour mixture) to the simmering broth while whisking continuously to avoid lumps. Continue whisking and then add the milk, heavy cream, tomato paste, Worcestershire sauce, seafood seasoning, salt, and cayenne pepper. Let it cook for about 3 to 5 minutes until the soup thickens.

Step 5: Place the imitation lobster meat into a food processor and pulse about 6 times to break it down slightly.

Step 6: Add the chopped imitation lobster and the white wine to the simmering soup. Stir and cook over low heat for 5 to 7 minutes until heated through.

Step 7: Ladle the soup into serving bowls and, if desired, sprinkle a pinch of paprika on top to add color and a bit of extra flavor.
