The Best Lamb Chops Recipe

This simple and flavorful lamb chop recipe is perfect for a quick yet impressive dinner. The lamb is cooked to perfection, tender and juicy, and complemented with a side of refreshing mint jelly. Serve with your favorite sides for a complete meal.

Ingredients

  • 4 (4 ounce) lamb chops
  • 1 tablespoon olive oil, or as needed
  • 1 clove garlic, minced
  • tablespoon crushed fresh rosemary leaves
  • Sea salt and freshly ground black pepper, to taste
  • cup mint jelly

Directions

Step 1: Preheat the oven to 425F (220C).

Step 2: Trim any excess fat from the lamb chops, leaving some for added flavor. Lightly coat each chop with olive oil.

Step 3: Season the lamb chops with minced garlic, crushed rosemary, sea salt, and freshly ground black pepper.

Step 4: Heat a cast iron skillet over medium-high heat and place the lamb chops in the pan.

Step 5: Transfer the skillet to the preheated oven and bake the lamb chops uncovered for 8 to 10 minutes, or until they reach an internal temperature of at least 140F (60C) for medium-well doneness.

Step 6: Remove the lamb chops from the oven and cover them tightly with aluminum foil. Let them rest for 8 to 10 minutes before serving.

Step 7: Serve the lamb chops with a side of mint jelly for dipping.

This lamb was delicious! It was quick, and with good ingredients definitely would impress. The only issue I had was getting all the fat off the meat (our butcher gave us straight chops instead of lollipops) and we ended up leaving it in the oven just a bit longer because it was still very rare.

I thought these lamb chops were absolutely delicious they were tender and juicy and full of flavor. I did have to make some changes because I don't have an iron skillet So I put them in a foil lined metal PAN in the oven for about 20 minutes and they were perfect.

Great recipe especially for my first time cooking or eating lamb chops! I didn’t use a cast iron pan so I had to flip and cook mine 10 min each side. Plus mine were regular lamb chops and not the lollipops. I doubled the recipe because I made 8 chops. Very good recipe!

Best Lamb Chops I've had. I cooked mine for 7-8 minutes longer because they were very thick, and I like my meat medium well to well done. They turned out great!

I wish I had had the same luck with caramelizing that others did, but no. I use my cast-iron Pan, I took my chops out of the refrigerator more than an hour ahead of time, everything was as it should be. After being In the 425° oven for eight minutes, they just looks like sad little things. So, I quickly turned on my Stove top burner to Hi, took the pan out of the oven, and put it on the burner. Immediately, I was able to get a nice crust on both side sides of the Lamb chops. The internal temperature was then 135°, so I took them out of the pan onto a plate covered them loosely and let them rest. Checking the temp again, they were perfectly done at my preferred medium rare. Back to The stove top for my future lamb chops.
