Stuffed Zucchini Boats Recipe

This recipe yields 4 servings of a delicious and healthy dish. The zucchini is tender and stuffed with a cheesy, flavorful mixture thats perfect for any meal.
Ingredients
- 1 pounds zucchini, halved
- 1 cups dry bread crumbs
- 2 ounces shredded Cheddar cheese
- cup minced onion
- 2 tablespoons chopped fresh parsley
- 1 teaspoons salt
- 2 eggs, beaten
- cup grated Parmesan cheese, divided
- 2 tablespoons butter, diced
Directions
- Preheat the oven to 350F (175C).
- Bring a large pot of salted water to a boil. Add the zucchini halves and cook until tender, about 15 minutes. Drain well.
- Scoop out the flesh from the zucchini halves to create boat-like shapes, being careful not to tear the skin.
- In a medium mixing bowl, combine the scooped-out zucchini flesh, bread crumbs, Cheddar cheese, minced onion, chopped parsley, salt, beaten eggs, and most of the Parmesan cheese. Stir until everything is well mixed.
- Stuff the zucchini boats with the mixture, packing them generously.
- Dot the tops of the stuffed zucchini with small pieces of butter and sprinkle with the remaining Parmesan cheese.
- Place the stuffed zucchini boats in a baking dish and bake in the preheated oven for about 30 minutes, or until the tops are golden and the zucchini is tender.
