Stuffed Zucchini Boats Recipe

This recipe yields 4 servings of a delicious and healthy dish. The zucchini is tender and stuffed with a cheesy, flavorful mixture thats perfect for any meal.

Ingredients

  • 1 pounds zucchini, halved
  • 1 cups dry bread crumbs
  • 2 ounces shredded Cheddar cheese
  • cup minced onion
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoons salt
  • 2 eggs, beaten
  • cup grated Parmesan cheese, divided
  • 2 tablespoons butter, diced

Directions

  1. Preheat the oven to 350F (175C).
  2. Bring a large pot of salted water to a boil. Add the zucchini halves and cook until tender, about 15 minutes. Drain well.
  3. Scoop out the flesh from the zucchini halves to create boat-like shapes, being careful not to tear the skin.
  4. In a medium mixing bowl, combine the scooped-out zucchini flesh, bread crumbs, Cheddar cheese, minced onion, chopped parsley, salt, beaten eggs, and most of the Parmesan cheese. Stir until everything is well mixed.
  5. Stuff the zucchini boats with the mixture, packing them generously.
  6. Dot the tops of the stuffed zucchini with small pieces of butter and sprinkle with the remaining Parmesan cheese.
  7. Place the stuffed zucchini boats in a baking dish and bake in the preheated oven for about 30 minutes, or until the tops are golden and the zucchini is tender.
