Baked Pineapple Casserole Recipe
Ingredients
- 1 cup white sugar
- cup unsalted butter, softened
- 4 large eggs
- 1 pinch ground cinnamon (Optional)
- 1 pinch ground nutmeg (Optional)
- 1 (20 ounce) can crushed pineapple with juice
- 5 slices white bread, torn
Directions
- Preheat the oven to 350F (175C). Grease a medium-sized casserole dish.
- In a mixing bowl, beat sugar and butter together using an electric mixer until the mixture is creamy.
- Beat in the eggs one at a time, then add the cinnamon and nutmeg (if using). Stir to combine.
- Mix in the crushed pineapple along with its juice, then add the torn bread pieces. Stir until everything is well incorporated.
- Transfer the mixture to the prepared casserole dish and spread it out evenly.
- Bake in the preheated oven for about 1 hour, or until the dish is bubbly and lightly browned on top.

After reading reviews I made adjustments, so I found it hard to give it the full 5 stars. This was a very tasty dish that went well with the pork tenderloin I prepared. I also served broccoli along with it. It was a nice presentation. Since so many commented on the sweetness, I cut the sugar in half. I used pineapple in its own juice, NOT the kind that has the sweetened syrup. It turned out fine...not sweet at all. I also cut the butter in half. Next time I would use just two tablespoons. I could still taste a bit of greasiness, although not bad. I followed the directions and used a pinch of cinnamon and nutmeg. If you want to taste these, you will have to use more than a pinch. We could not detect either spice in the casserole. Many reviewers said it was too eggy for them. So I used three eggs and 1/4 cup of milk. It turned out well. Cooking time was right on. I used a 2 1/2 quart casserole. It was a nice change from potatoes. Everyone who ate it, enjoyed it.

My family has been making this recipe for a long time and we always called it Baked Pineapple. I think, for us, the recipe came from a cookbook called Tidewater on the Halfshell. One difference for us is we melt the butter in a skillet and toast the cubed bread in the butter before adding to the pineapple/egg mixture. I think it makes a difference to have those toasty bits of bread. Delicious either way, though!

I thought it was very good. I’ll give it a five star and maybe add walnuts. This is my second time making it within two days. I took it to our friends house for a gathering. They all loved it, so I had to come home and make one for my husband.

This was delicious! I used chunky apple sauce instead of pineapple (because it's what I had on hand) and added pecans! I will definitely make it again, and I'll try pineapple next time. Everyone loved it! Thanks for the recipe!

We’ve made this for many years with a little change: 3/4 sugar 3T. Flour 3eggs Lg can crushed pineapple Mix to together well and pour in casserole dish. 1 stick butter, melted 6 slices bread, cubed Toss cubed bread in melted butter. Pour on top of pineapple mixture in the casserole dish. Press down slightly for bread to soak up some of the juices. Bake at 350 for 25-30 min

I make this by request for my family every holiday dinner. It is great. I don't add any spices, just crushed pineapple, eggs, sugar butter and bread. The key difference is the equal parts butter and sugar (1/2 cup each). I believe the 2 to 1 ratio of sugar to butter is too much. I got this recipe from my late mother. We call it pineapple bread.

I made this tonight as written except I only had rye bread. Everyone loved it. Next time I will cut the sugar to one-half cup. Thank you for the recipe

The flavor is exceptional, more like a dessert. We'd call it Pineapple Bread Pudding. We used fresh pineapple (found one on the discount shelf at the grocery store) and whole wheat bread which probably makes it less visibly appealing than white bread.

Been making this for 40 years. Goes with everything. If I ever don't make it, there is sadness. I have switched to pineapple tidbits. A much improved pineapple-ish flavor. Never used the spices. And always at least double the recipe. Especially if you want a little left for tomorrow.

Instead of bread I used cinnamon raisin bagels. 3 bagels (6 halves) torn up works perfectly. The final product had a perfect bread pudding consistency. I served it with vanilla ice cream as a dessert and it was a huge hit. will definitely make again.

I buy a loaf of French bread at local grocery store bakery. I only use half a loaf, cut into 1” squares. I love this recipe and everywhere that I take it, it is praised!! I love it hot with a ham dinner, then, I like it cold with whipped cream on top for dessert!

I've been making this recipe for over 40 years. Family and friends love it and request for holidays and potlucks. I used wheat instead of white bread and I use 8 slices. I omit the cinnamon and nutmeg, reduce the amount of sugar to 1/2 to 2/3 cup, and serve it as a tasty side dish.

I have never heard of or had anything like this. And it was a DELICIOUS surprise!! Wow! Only change was to half the sugar but all else - as written. I can see this making an appearance at our upcoming Easter table. Possibly even again at Thanksgiving. It was a hit! Thanks Cheryl!

This recipe is easy and delicious! My whole family enjoyed it. It would be an excellent brunch item. I reduced sugar to 1/2 cup and added 1 tsp vanilla after reading reviews. Don’t over mix after adding the bread!
