Hibachi-Style Fried Rice Recipe
Ingredients
- cup olive oil
- 2 large eggs, beaten
- 1 cup chopped grilled chicken (optional)
- cup chopped green onion
- 2 tablespoons chopped garlic
- 2 cups cooked white rice
- 3 tablespoons soy sauce
Directions
Step 1: Gather all ingredients and have them ready before starting.
Step 2: Heat a wok or nonstick skillet over medium-high heat and add the olive oil. Once hot, pour in the beaten eggs and cook, stirring constantly, for 2 to 3 minutes, or until the eggs are fully cooked through.
Step 3: Add the chopped chicken (if using), green onions, and garlic to the scrambled eggs. Stir and cook for about 2 minutes until everything is heated through.
Step 4: Add the cooked rice to the egg mixture, stirring to combine. Continue to cook and stir for another 2 minutes until the rice is warmed through.
Step 5: Pour in the soy sauce and stir until the rice is evenly coated, cooking for an additional 3 minutes to allow the flavors to meld together.
Step 6: Serve immediately, and enjoy your flavorful homemade fried rice!

One thing I see many of these fried rice recipes missing that I've found really makes a difference is to refrigerate the cooked rice overnight before cooking.

I really love this recipe. I use half olive oil half sesame oil. I like the added flavor of the sesame oil.

I use this recipe as a base. I always add 1 medium onion, about a cup of frozen peas, usually 2 zucchini, and a can of water chestnuts. I start with cooking the onion for about 5 minutes on medium, then add the garlic(which I always double, we love garlic) and zucchini. After a couple minutes, I line the pan with all the veggies that I have cooked, making room in the center to cook the eggs. I add 1 T. of butter in the center for cooking the eggs. That little bit of butter adds another layer of flavor to the recipe. Once the eggs are done I add the rice, rest of the veggies, and soy sauce(4 to 6 Tablespoons). Before serving I also add salt and pepper to taste and about 1 teaspoon of sesame oil to it all and mix well. My son doesn't like the texture of sesame seeds. The sesame oil gives the taste of the seeds without the texture of them. Every time I make this everyone raves about how it's better than take out and just as good if not better than the hibachi restaurant. I hope this helps others. When it comes to cooking recipes, I love experimenting! BTW, I cooked the chicken separate. My son is autistic. I've learned to cook certain ways so he will eat everything. And chicken on the side and not mixed in is another thing that helps him. Enjoy!!

I have played around with this recipe quite a bit. I usually grill on Saturdays and use whatever I have leftover on Sunday as the protein in this recipe. I have also used pan seared spam with a can of crushed pineapple. I usually add a bag of frozen mixed vegetables that I add towards the end so they still have some texture but are good and warmed through. Lots of potential for variation with this one. Also, I use coconut aminos in place of soy sauce, much less sodium and no soy for those with dietary restrictions.

always add a T of oyster sauce and toasted sesame oil to taste - important to add the cold rice last (as opposed to some other recipes)

Nice. Only differences I made was ginger cut to match sticks and slithers of garlic cooked in oil before everything else and added and sliced water chestnuts, bamboo shoots and broccoli. And a tablespoon of dark, roasted sesame oil and hoisin sauce.

Yo definitely have to use cold leftover rice. Usually I add some frozen peas and carrots.

This is actually an easy recipe to make. Instead of 1/4 c olive oil, I did half olive oil and half sesame oil. It was delicious!!

This is the first recipe I've ever made that my kids both devoured! My son is very picky and he loved it! I added 1 tbsp of soy sauce per cup of rice which was perfect! I baked a pound of chicken breast in the oven and then cubed it before I added it to the recipe. I used Jasmine rice and added 1 extra cup to stretch the recipe a little more. This will now be in my weekly repertoire for sure.

First time trying to make hibachi style fried rice instead of spending $70 for the two of us to eat at Kumos and this was the first easy recipe that came up. I am blown away and we are hooked. I found another super simple recipe for the chicken and it was better than Kumos could ever hope to be. Already making another batch so my husband has lunch for work and he’s so happy. He’s also a very picky eater but LOVES IT! Can’t wait to try it with day old rice next time to see if it really makes a difference. Oh, we did add some more soy and also added in teriyaki as well. We love extra sauce!

It's a great base recipe. We like things more flavorful, so I added 1/2 again as much garlic, onion, and soy sauce. Delicious!
