Slow Cooker Corned Beef and Cabbage Recipe

Ingredients

  • pound baby carrots
  • pound small yellow potatoes (such as Dutch Yellow Pee Wee potatoes)
  • 1 sweet onion, cut into bite-sized pieces
  • 4 cups water
  • 1 (4 -pound) corned beef brisket with spice packet
  • 3 tablespoons onion powder
  • 3 tablespoons garlic powder
  • 1 bottle Irish stout beer (such as Guinness)
  • 1 medium head cabbage, quartered and leaves separated

Directions

Step 1: Spread baby carrots, potatoes, and onion over the bottom of a slow cooker crock, then pour in water.

Step 2: Season the brisket on the lean side with onion powder and garlic powder. Place the brisket, seasoned-side down, onto the vegetables.

Step 3: Pour the beer over the brisket, then sprinkle the spice packet over the top.

Step 4: Cover and cook on Low for 10 hours.

Step 5: Transfer the brisket to a cutting board.

Step 6: Stir the cabbage into the liquid and vegetable mixture remaining in the slow cooker.

Step 7: Cover and cook on High until the cabbage is tender, about 30 to 45 minutes.

Step 8: Slice the corned beef and serve with the cabbage mixture.

After reading the other reviews, I made a few small changes. Only used about three cups of water, which was just enough to cover the vegetables in the bottom of the crockpot. As for the onion and garlic powders, I dried the lean side of the brisket, and lightly sprinkled it with the garlic and onion powders. I’m sure I didn’t use near as much as the recipe calls for, but it was still very flavorful. The cabbage was maybe the best I’ve eaten, any other time I’ve cooked cabbage, I obviously over cooked it, the timing on cooking it here was about right. It was all very good!!

The slow cooker corned beef turned out great. The only changes made were less onion power and garlic powder (1 tsp each), a bottle of Shiner, adding the vegetables after about 3 hours on high, and adding the cabbage for the last 1-1.5 hours.

One thing I recommend is to add 1 cup of single malt whiskey to the water before or after meat & cabbage. Fill crock pot with water. Let simmer 6-8 hours. SOOOO tender & delicious!!

This wasn't too bad. I really like the corned beef, but the vegetables, especially the carrots and potatoes, had a really overpowering and bitter beer taste. I made the recipe exactly as written, except for cutting back on the garlic and onion powders per the other reviewer's recommendation (I used 1.5 tbsp of each). I'd say that 2 tbsp of each is probably sufficient. This recipe could also benefit from using more vegetables, as 1/2 lb of baby carrots and potatoes isn't very much. I'd recommend using only half the beer and sprinkling some of the spice packet into the liquid, not just on top of the beef. The meat was really tender though, and Im looking forward to eating it in a sandwich for lunch tomorrow.

Needs more zip for our family tastes. Leftovers I will be adding Jack Daniel, balsamic vinegar, and just for me likely some hot sauce! Do admit the meat was very yummy...

Never, never, NEVER put the vegetables in with the meat from the start. The potatoes should be added a few hours before it's estimated to be finished, and other vegetables about an hour before it's finished. You can add onions earlier, or add some at the start and some later for different textures.

i was worried about the bitterness as per the other reviewer, so i treated it with some lemon juice and a bit of sugar. i may have added it in a bit too late in the process to avoid bitter vegetables but it seemed evened out the flavor pretty well.

It was good, not the author's fault, I used a Budweiser instead of Guinnes. So I will still give this recipe 5 stars. Corned beef cut like butter.

I made mine in the slow cooker and it was so good my husband and I ate the entire thing all by ourselves. The liquid is in the freezer for some yummy onion soup for later. I can just taste that already. Thanks for sharing this recipe.
