Homemade Ground Chicken-Chickpea Burgers Recipe

Quinoa and Chickpea Chicken Patties
This healthy and flavorful recipe combines quinoa, chickpeas, and ground chicken for a protein-packed, nutritious meal. Its easy to prepare and perfect for a quick weeknight dinner.
Ingredients
- 1 cups water
- cup dry quinoa
- 1 (15.5 ounce) can chickpeas
- 8 ounces ground chicken
- cup egg whites
- cup minced beets
- cup oat bran
- cup minced onion
- 3 prunes, minced
- 1 tablespoon minced poblano pepper
- 1 teaspoon salt
- 1 teaspoon ground chile pepper
- 1 teaspoon ground cumin
- 1 teaspoon ground black pepper
Directions
- Bring water and quinoa to a boil in a saucepan. Once boiling, reduce heat to medium-low, cover, and simmer for 15 to 20 minutes, or until the quinoa is tender and the water is absorbed.
- Preheat the oven to 350F (175C).
- In a separate bowl, roughly mash the chickpeas using a fork or potato masher.
- Add the cooked quinoa, ground chicken, egg whites, minced beets, oat bran, onion, prunes, poblano pepper, salt, chile powder, cumin, and black pepper to the mashed chickpeas. Mix everything together until fully combined.
- Shape the mixture into 6 equal-sized patties.
- Wrap each patty individually in aluminum foil.
- Place the foil-wrapped patties on a baking sheet and bake in the preheated oven for about 20 minutes. The patties are done when they are no longer pink in the center and the juices run clear. For accurate results, check with an instant-read thermometer the internal temperature should reach 165F (74C).
Cook's Notes
- cup egg whites is approximately the equivalent of 2 eggs.
- Feel free to adjust the seasonings to your taste. You can increase or decrease the amount of salt, pepper, or spices.
- If you prefer, you can pan-fry the patties instead of baking them. Simply heat a little oil in a pan over medium heat and cook the patties for about 4-5 minutes per side until golden and cooked through.
- This recipe can also be transformed into a meatloaf by placing the mixture into a loaf pan and baking for about 30 minutes.
