Grilled Corn with Parmesan and Mayonnaise

Ingredients

  • cup mayonnaise
  • 5 ears corn, husk and silk removed
  • 1 cup shredded Parmesan cheese
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

Directions

  1. Preheat your outdoor grill to medium-high heat and lightly oil the grate to prevent sticking.
  2. Brush a thin layer of mayonnaise over each ear of corn, making sure to coat them evenly.
  3. Sprinkle the corn with shredded Parmesan cheese, chili powder, salt, and black pepper to taste. Ensure each ear is well-seasoned.
  4. Wrap each ear of corn individually in aluminum foil, sealing the edges tightly to keep the moisture in during grilling.
  5. Place the wrapped corn on the preheated grill. Turn the ears occasionally, grilling until the kernels begin to brown, approximately 10 minutes. The corn should be tender with a slight char.
  6. Once done, remove the foil and serve immediately for a deliciously smoky and cheesy treat.

I feel like we might have grilled this corn for a bit too long. Despite that, the taste was a delightful departure from plain butter. We'll definitely need to monitor it more closely next time. EDIT: I gave this recipe another shot, but this time I grilled the corn in its husks and omitted the mayo altogether. Instead, I combined grated parmesan cheese, chili powder, salt, pepper, and a teaspoon of smoked paprika in a separate bowl. After grilling the corn, I buttered it and generously sprinkled the cheese and spice mixture on top - it was a huge improvement!!!

We hosted a dinner party with 8 guests and followed the suggestions from other reviews. I prepared the corn by cutting it off the cob and arranging it in a 9X12 baking dish (using 14 ears of corn). I topped the corn with mayo and freshly grated Parmesan cheese before baking according to the instructions. My husband also made BBQ ribs to accompany the meal. This dish was a fantastic beginning, but I decided to enhance it by adding extra corn, skipping the mayo, and mixing the dry ingredients with melted butter before brushing it onto the corn. Instead of using aluminum foil, I placed the corn directly on the grill. The result was absolutely delicious!

I have been using mayonnaise and parmesan for years! I leave the leaves on the cobs while grilling until they turn all black, then peel them off and spread the mayo and parm on them. And now, I am excited to add chili powder to the mix as well!
