Guinness Slow Cooker Pulled Pork Recipe
Ingredients
- 2 teaspoons whole black peppercorns
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 1 teaspoon coriander seeds
- 9 fluid ounces barbecue sauce
- cup brown sugar
- cup Irish stout beer (such as Guinness)
- 1 slice sweet onion, halved and sliced
- 4 teaspoons minced garlic
- 1 teaspoon ground paprika
- 1 teaspoon sea salt
- teaspoon chili powder
- 1 (6 pound) pork butt roast
Directions
Step 1: Grind the black peppercorns, cumin seeds, fennel seeds, and coriander seeds using a spice grinder. Transfer the ground spices to a slow cooker.
Step 2: Add the barbecue sauce, brown sugar, Guinness, onion, garlic, paprika, sea salt, and chili powder to the slow cooker. Stir the mixture well to combine.
Step 3: Add the pork butt roast to the slow cooker and rub the sauce all over the meat.
Step 4: Cover the slow cooker and cook on Low for 12 hours until the pork is tender and can easily be shredded with a fork. Alternatively, cook on High for 3 hours, then switch to Low for an additional 4 to 5 hours.
Step 5: Once the pork is fully cooked, remove it from the slow cooker and use two forks to shred the meat.
Step 6: Return the shredded pork to the slow cooker and mix it with the sauce. You can serve the pork immediately or keep it warm until ready to serve.
Cook's Notes
For an enhanced flavor, marinate the pork in the sauce in the refrigerator for 8 hours or overnight. To thicken the sauce further, remove the lid of the slow cooker during the final 30 minutes of cooking.
