Broccoli Garlic Angel Hair Pasta Recipe
Ingredients
- cup butter
- 2 tablespoons olive oil
- 6 cloves garlic, minced
- 1 teaspoon red pepper flakes
- Salt, to taste
- 1 pounds broccoli, stems and florets chopped separately
- 3 cups chicken stock, or more as needed
- 1 (16 ounce) package angel hair pasta
- cup freshly shredded Parmigiano-Reggiano cheese
Directions
Step 1: Heat butter and olive oil in a large skillet over medium heat. Allow it to get hot before adding the minced garlic. Stir occasionally and cook until the garlic softens, but avoid letting it brown, which should take around 1 to 2 minutes.
Step 2: Add the red pepper flakes and season with salt to taste. Stir well to combine the flavors.
Step 3: Pour the chicken stock into the skillet and bring it to a simmer. Once simmering, add the broccoli stems. Continue to cook for 10 to 12 minutes, or until the stems are tender. If the mixture begins to dry out, add more chicken stock as needed.
Step 4: While the broccoli stems are cooking, bring a large pot of lightly salted water to a boil. Add the angel hair pasta and cook, stirring occasionally, until the pasta is nearly tender, about 4 minutes. Drain the pasta once cooked.
Step 5: Add the broccoli florets to the skillet with the broccoli stems. Cook for an additional 3 to 4 minutes until the florets turn bright green and become slightly tender.
Step 6: Transfer the drained pasta to a large pot. Pour the broccoli sauce over the pasta, then add the freshly shredded Parmigiano-Reggiano cheese. Stir everything together to combine.
Step 7: Cover the pot and let it sit for about 2 minutes to allow the pasta to absorb any excess liquid and finish cooking. Serve immediately and enjoy!

I followed the recipe exactly, sautéing the shrimp in a mixture of olive oil and butter before adding the broccoli stem pieces. Later, I reintroduced the shrimp when adding the florets. The dish turned out to be incredibly flavorful. I will definitely be making it again.

Chef John - I am a big fan! The taste of this recipe is absolutely fantastic! However, I found that the cooking times and order of steps were a bit off. For example, starting to boil the water should be the FIRST step (not step 3), and if using dried pasta, it usually takes 8-12 minutes to cook depending on the brand. I should have noticed this and made adjustments, but it was a busy workweek leading up to Friday night cooking. I had to turn off the burner for my broccoli and broth while waiting for step 3 to catch up. I also decided to add some raw shrimp in the last few minutes of sautéing the broccoli before turning off the heat and waiting. This allowed the shrimp to soak up the flavors of the garlic-broth without becoming overcooked. Once the pasta was ready, I mixed everything well, letting the pasta absorb the broth and cheese. The result was simply amazing! Despite being simple, it received many compliments. I was too hungry and eager to eat to take a photo, but I've already committed to making it again. I served it with crusty French bread. Thank you! Delicious!

This dish turned out well, although I initially reduced the chicken broth to 2 cups and added another 1/2 cup before serving.

Chef John is absolutely correct about the 4-minute pasta hack. While Rummo angel hair pasta may be slightly pricier, my husband prefers the thinner noodles, and this pasta cooks in just 4 minutes - or even 3 for this particular recipe.

When I came across this recipe, I was eager to give it a try. With a package of broccoli and cauliflower on hand, I decided to use both in the dish. Unfortunately, I couldn't make the sauce as I was lacking some of the ingredients, but I went ahead with the cooking process. To my surprise, the final result was absolutely delicious! I sautéed the broccoli and cauliflower in olive oil, and the combination of chicken broth with pasta turned out to be a winner. I will definitely be making this recipe again and again. In fact, I am preparing it for dinner tonight, using both veggies once more. Yum!

The whole family found this recipe to be quite bland. Even with regular chicken broth instead of low-sodium, it still needed extra salt at the table. We all agreed that more cheese would help enhance the flavor. I personally added some Lemon Pepper seasoning, which gave it a nice kick. I would definitely make this again, but I’d jazz it up with additional spices. The dish was also a bit watery, as some other reviewers noted. Next time, I plan to cook the pasta with the broccoli in the chicken broth to make it a one-pot meal, which should help eliminate the excess water and improve the pasta's flavor. Overall, it's a good concept, but it needs some adjustments.

We have cooked this recipe three times already and it has been a success every time. Following a recommendation from another user, we included chicken in the dish, using around a pound of boneless thighs cut into bite-size pieces. This transformed it into a substantial main course, providing more than enough for our family of five.
